After a hidden chocolate heart in vanilla cake, my today's post is going to be an irresistible sugar crusted eggless butterscotch muffins. I carried butterscotch chips all the way from India during my last trip. Actually i never get butterscotch chips easily here in shops, you have to be lucky to get them as they are very rare in most of the shops here, but for my surprise i got butterscotch chips easily in India from a well known baking related retail shop in Pondicherry. Since i dont want to miss the chance to bake with butterscotch chips i didnt even hesitated a second to grab some chips. Trust me, if you conserve them properly they stay ultimately prefect to use them later in your baking. I freezed them in small batches in a ziplog bags to use whenever i need them, easy to use and stays good for a long.Sending to Srivalli's Anniversary Mela.
2cups All purpose flour
3/4cup Sugar
1tsp Baking powder
1/2tsp Baking soda
1cup Yogurt
1/2cup Oil
1/4cup Milk
1tsp Vanilla extract
1cup Butterscotch chips
Sugar
Preheat the oven to 350F, line the muffin tray with muffin papers.
In a bowl, sift the flour,baking powder,baking soda and salt.
Meanwhile in a small bowl whisk together the sugar, yogurt,milk,oil and vanilla extract.
Pour the wet ingredients to the dry ingredients, whisk lightly. Dont overmix the batter.
Gently fold in the butterscotch chips.
Spoon the batter evenly to the already prepared pan, sprinkle sugar generously on the top and bake for 20-25 minutes until a skewer inserted comes out clean.
Transfer to wire rack and cool it.
Carefully remove the muffins from the pan, cool completely and enjoy.
Coming to this muffins, those melted butterscotch chips gives an excellent texture while having this cuties. One can have this muffins for breakfast, as a dessert after a lunch or else simply for their snacks with their favourite drinks. You have many options to mix and match the ingredients while making this muffins, even couple of fruits chunks can make this simple muffins more interesting. As am running my mega marathon for this whole month of April with Fire up your oven as theme, this muffins going to be a part of bakes i have been posting since two weeks.

Those muffins are irresistible and love the color. I recently used butterscotch chips and loved it in cookies. I still have some and will try using those in muffins.
