Pizza, this word itself makes my kids happy, they just love to have pizzas everyday,but since i dont like to feed often my kids with these cheesy super rich Italian dish, i'll try myself to make them at home with healthy stuffs in it. Sometimes i'll make wheat based pizza crust or else i'll go for mixed millets pizza crust as well. Also i'll try to add grated veggies in my homemade pizza based crust.However i'll find all the way to add healthy stuffs in my homemade pizzas. Pizzas makes an excellent meal if they are prepared in a healthy way. If you have an opportunity to make a pizza without cheese, how can i miss it. When googling, the name coca pulled me to go through the recipe and got to know more about this Spanish aka Catalan style of tart aka pizza which goes for a yeasted thin crust topped with sauteed vegetables without cheese.
The most interesting part of this Coca de Venduras is this pizza is topped generously with summer vegetables and its completely vegan. A prefect treat for vegetarian and vegan lovers, if you love summer vegetables loaded tart or pizza then this pizza is for you. Actually i prepared this beautiful pizza for this month's We Knead To Bake, a monthly baking event by Aparna of My Diverse Kitchen.Since Aparna is not feeling well, she suggested the members of this group to bake Pizza with different topping or shapes without any particular rules to follow.When i saw this Catalan style vegetable pizza, the simplicity of this pizza pulled me to give a try soon. Obviously i tried immediately this vegan pizza, this pizza is very super easy to make and delicious to enjoy definitely.Sending to Bake Fest guest hosted by Nalini.

For the dough:
3cups All purpose flour or Bread flour
2tbsp Olive oil
1cup Luke warm water
1tsp Instant yeast
1tsp Sugar
1/2tsp Salt
Topping:
1no Onion(chopped)
1no Zucchini (chopped)
2nos Carrots (chopped)
1no Red and Green Bell pepper (chopped)
1/2cup Tinned tomato (peeled and cubed)
2tsp Oil
1tsp Oregano
1/2tsp Salt
Take the flour, instant yeast, sugar and salt in a large bowl, add in the olive oil and luke warm water and knead everything as a smooth and pliable dough.
Arrange the dough in a greased bowl and keep it in an warm place for 2hours.
Punch down the dough and roll the dough as thin rectangalur crust, transfer the crust to a baking sheet arranged over a baking tray.
Keep the dough in a warm place, cover with a towel.
Meanwhile heat the oil in a pan, saute the chopped onions, chopped carrots, chopped red and green bellpepper, chopped zucchini with oregano and salt for few minutes.
Add in the tinned tomato and cook until the mixture turns thick.Keep aside and let it cool.
Preheat the oven to 210F.
Now take the already prepared crust, spread the cooked vegetable mixture over the crust.
Arrange it to the preheated oven and bake for 20minutes or until the crust turns golden brown.
Cool completely and slice as squares.
Serve with salad.
