Eggless Hungarian Kipfels/Eggless Kiffles

Kipfels or Kiffles are Hungarian sweet rolls often prepared for family gatherings especially for birthday, anniversary, wedding or simply for a get together as snack.Usually these addictive pastry style rolls goes for rich dough. Kipfels are traditionally prepared with lards, loads of eggs, butter and cream. Kipfels looks almost like crescent shaped and they are not large. Eventhough Kipfles goes for very rich dough, they also goes for fillings prepared with either nuts, cream cheese,cinnamon or else fruit fillings like prunes, apricots. When its comes to make this super rich Hungarian kipfels are eggless, its seriously a real challenge for us. But still i tried my hands to make this eggs,butter, cream loaded kipfels as completely eggless eventhough i went for butter and cream cheese. Trust me these kipfels are dangerously addictive.


The original recipe goes for Lekvar, an apricot jam prepared especially for making this Kipfels. But i prepared mine with strawberry jam and also skipped the sugar used in for nut coating as i felt this Kipfels are already very sweet.However strawberry jam works wonder in this Hungarian rolls. My kids enjoyed thoroughly this yeasted kiffles with their glass of milk for their evening snacks. This eggless Hungarian Kipfels are our this month's challange for Baking Eggless,a monthly event owned by Gayathri.

Recipe Source: June Meyer's Authentic Hungarian Kipfels
2+1/2cups All purpose flour
1tsp Instant yeast
75grms Butter (room temperature)
1/4tsp Salt
1/2cup Sugar
1tsp Lemon zest
2tbsp Lemon juice
1/2cup Lukewarm milk
1/2cup Cream cheese
Strawberry Jam (as per need)
1/2cup Coarsely grounded walnuts


Take the flour, instant yeast, sugar, salt, lemon zest,lemon juice, cream cheese, lukewarm milk and knead everything slowly.

Finally add the butter and knead everything as soft and smooth dough.

Arrange the dough in a greased bowl, let it double the volume for an hour.

Divide the dough as two equal pieces, roll the dough as 2inch round shaped circles.

Cut the dough as medium sized wedges, drop 1/2tsp of jam and roll it as crescent shaped rolls.

Drop it in the nuts mixture and roll it gently.

Arrange this nut coated rolls over a baking sheet lined over a baking tray.

Let it rise for half an hour.

Preheat the oven at 350F.

Bake in middle rack until the crust turns golden brown.

Remove them from oven, let them cool completely in wire rack.

Enjoy this super rich and addictive kiffles.
