Coriander & Coconut Milk Paratha

Have you ever tried coriander and coconut milk paratha, sounds different and very interesting na, yea i tried few days back this incredible and very flavorful parathas. Am posting this very different parathas for this month's Shhhh Cooking Secretly Challenge started by me three months back.We are having fun in guessing other's secret ingredients through the pictures each of us have been sharing in our FB group. Trust me its seriously very hard to find out the secret ingredients,each of us have done an excellent job by creating delicious dishes with their secret ingredients which is still a mystery for us.Today you can able to see a couple of bloggers posting their beautiful creations they prepared specially for this event.Am very thankful to each and every members of this group for their participation every month without any fail.


For this month's challenge, my pair is Shoba of Anubhavati, she joined the group recently and gave me both coriander leaves and coconut milk as my secret ingredients. Initially i thought to make something as soup or else as gravy. Somehow i changed my mind and i was breaking my head to make a dish quite different from the usual one, then comes this paratha idea, i simply prepared a spiced coriander paste. I used both the spice paste, luke warm coconut milk for kneading the parathas. The flavor of coriander leaves, the spices and coconut milk makes this superb parathas more tasty which suits prefect for anytime of the day.Sending this post to Ahlan Ramadan-The Healthy Way.


2cups Wheat flour
Salt
1/2cup Coconut milk (luke warm)

Coriander paste:
1cup Chopped coriander leaves
1/2tsp Cumin seeds
1no Green chilly
1no Garlic clove
1tbsp Olive oil

Grind everything given for the coriander paste as bit coarse paste without adding water.

Take the flour,salt in a bowl, add the coriander paste, lukewarm coconut milk.

Knead everything well smooth dough, keep aside for half an hour.

Make  medium sized balls from the dough,dust the balls with enough flour and roll as round parathas using rolling pin...

Heat few drops of oil in a tawa, drop gently the flattened paratha.

Cook the paratha on both sides, drizzle oil if needed.

Serve with any sort of spicy side dish..
