Persian Saffron Tofu Kebab

I love cooking different cuisines eventhough my favourite always goes to Thai cuisine. Today we are landing towards to the flavoursome Persian or Iranian Cuisine. This cuisine have some mutual culinary influences from many cuisine especially Indian, Central Asian. Fresh herbs are usually used along with fruits like prunes,apricots,raisins and pomegranates. Typical Persian main dishes goes for rice with meat, mostly chicken and lamb. Persian flavourings such as saffron, dried limes, cinnamon and parsley are mild delicately and used in some special dishes.

For this month  International Food Challenge ,a monthly event started by two wonderful food bloggers Sara and Shobana, Savitha of Savitha's Kitchen who is the host of this month chosed delicious and beautiful Persian dishes. From the list of recipes she gave i chosed to cook this fantastic grilled saffron tofu instead of chicken as per the original recipe went for. Trust me, this tofu is an incredible starter to enjoy simply with a pickling sauce or you can truly enjoy this saffron tofu simply with some salads. If you want to make with chicken, just go on am sure this Persion saffran chicken kebab aka Joojeh Kabab will tastes simply awesome too.

Eggless Julekake - Norwegian Christmas Bread

Julekake is a cardamon scented christmas bread stuffed with raisins and candied citron. This bread is very easy to make with eggs but when its comes to eggless version seriously you need to break your head to replace them. My eggless version goes for raisins and candied orange, since its not christmas season here i couldnt able to spot out candied citrons in supermarkets, but trust me candied citron will definitely take this bread to an another level. But the addition of the candied orange is not bad too, they brings that mild orange flavour while having this bread.

Do you want to know how i replaced eggs in this bread, just with cream cheese. Yes my Julekake is made with cream cheese,trust me cream cheese are good subsitute of eggs and they gives a wonderful smooth dough too. This Julekake is our this month's Baking Eggless,a monthly event owned by Gayathri. Bellpepper Peas Sundal

Sundal is one of the healthiest, easiest and definitely a nutritious snacks which i never forget to make at home. I usually soak large quantity of variety beans, later i'll conserve them in freezer for further use, its definitely handy and helpful to have already soaked beans in freezer for making sundals,gravies and why not curries with them. I have been following this method since a long and my freezer will always have sprouted beans and already soaked, ready to use beans like chickpeas,yellow peas, horsegram,kidney beans,butter beans etc.I'll advice you all to follow this method for easy cooking of beans, trust me you wont give up this method if you try once at home.

Today's recipe is a delicious, usual snacks at home, whenever i feel like having some nutritious snacks, immediately i'll check my freezer to make some sundals at home. One of my recent trial is this colourful yellow peas sundal, this sundal sounds almost like chaat but i didnt use any chutneys or sev to serve along with, am talking about the spice powders i used in it. Give a try, you will definitely enjoy this sundal, today its the last thursday of the month and its time to post for Vegan Thursdays, an vegan event running twice a month.

Mini Chocolate Cheesecake Cupcakes

Cheesecake, i tasted this high caloric cake for the first time when i landed Paris, before that i never heard about cheesecakes. My younger one just love cheesecakes and he can have it even everyday for his dessert, but obviously am limiting the consommation of this cheese cream stuffed cakes. For our this month's Home Baker's Challenge, a monthly baking event where we bake varieties of baked goodies, the host of this month is Siri of The Brave Cook suggested 5 different baked goodies, one among her choice is cheesecake cupcakes with berries, since berries are showing their heads rarely in my farmer's market i opted chocolates for making these beauties.

This cheesecake goes for egg and for baking, its not like the no bake cheesecake which can be prepared very quickly too, if you want to make no bake cheesecake you can check my Mango Cheesecake With Agar agar. Eggless Neapolitan Cupcake

Neapolitan cake is always made by vanilla, chocolate and strawberry cake, yes this cake goes for three layers of cake with different flavour. Neapolitan cake goes for a long process since it goes for three layers of chocolate,vanilla and strawberry cakes, the best alternative for making this delicious cake is baking them as cupcakes. For our this month's Home Baker's Challenge, a monthly baking event where we bake varieties of baked goodies, the host of this month is Siri of The Brave Cook. She suggested 5 different baked goodies, one among her choice is Neapolitan cake or neapolitan cupcakes. I immediately chosed cupcakes instead of cake as i dont want to spend more time in baking three layers of cakes.Sending Bake Fest#29 event by Vardhini,hosted by me.

This cupcakes are eggless, butterfree but not vegan which i simply prepared by preparing a cake batter which i divided into three equal portions. I used strawberry jam for strawberry flavoured batter, cocoa powder for chocolate batter and vanilla extract for the vanilla flavoured batter. These eggless cupcakes turned out extremely spongy,a prefect evening snacks to enjoy with your favourite drink. Eggless Sweet Potato Chocolate Cake

Chocolates, i cant give them up for any reason, if i feel down or happy immediately i'll bake something either with chocolate or else eat dark chocolate to keep myself comfort. Am starting an another week of blogging marthon with chocolates as theme. So the next three days is going to be desserts or bakes with chocolates. For today's post am posting a delicious,fudgy like cake with sweet potato and chocolate.Mashed potatoes are good replacement of eggs in cakes, obviously if am making eggless cakes i'll replace it either with applesauce or else with cooked mashed potatoes. But trust me, cooked mashed sweet potatoes are even more interesting to replace eggs in cakes.

This simple chocolate cake came out extremely fudgy, i served this cake topped with a simply chocolate ganache, trust me this cake is seriously a fabulous feast to a chocoholic person like me.If you are planning to make a simple chocolate cake, give a try to this sweet potato chocolate cake.

Japanese Melon Pan

Melon pan is a type of sweet bun which is quite famous in Japan, also in Taiwan and China. They are made from a yeasted dough covered with a thin layer of cookie dough. Melon pan ressembles like rock melon,eventhongh they are not traditionally prepared with melon, but its seems nowadays to give a variation to this melon pan, few manufacturers of this delicious softy pan add melon bites to this melon bread. There are couple of suggestions says that melon in melon pan comes from the sugar cookie topping which ressembles to the Japanese presentation of melon wedges which is cut into cross hatch pattern while serving. There is also an another suggestion says that the cracked surface of the cookie dough layer resembles a rock melon/cantaloupe hence the name.

Actually this bread may sound very hard to make but trust me its really very easy to make. The bread dough for the bun is mostly left plain, though some people add chocolate chops, while others fill the bun with pastry cream,cream cheese or simply with chopped chocolate, but i prepared mine simply with a simply buttery cookie dough, if you want you can still flavour your cookie dough with chocolate,green tea,pineapple if you like.Melon pan are best to eaten the day they are made, i went for eggs for making both the bread dough and cookie dough. Spinach Potato Samosa

Seriously its really hard to feed greens to kids, but thank god my kids love greens very much especially spinach. They just love it to the core. I can add spinach in anything and my kids can have them without any hesitation. Obviously i'll cook spinach atleast twice a week for our lunch. Recently i tried adding some chopped spinach in samosa along with potatoes. Trust me these spinach potato samosa was a big hit among my dearies and they enjoyed thoroughly with their favourite sauce.

Usually i'll avoid deepfrying samosas and go for the guilt free baked ones, but this time i opted for deepfrying. Dunno how to feed greens to your kids, just give a try to this fantastic crispy samosas, am sure your kids will definitely enjoy these deep fried beauties.Sending to Viji's SYS-W series - Hidden Ingredients.

Twice a month am introducing newbie bloggers to this immense blogging virtual world, just to showcase their blogs with their guest posts they prepred specially for me and i named the event as Rendez vous with a foodie. Creamy Broccoli Dal Soup

Soups,the most comforting foods are prefect to enjoy without any guilt while the weather is too down, the weather in Paris is just unimaginable, one day its too hot and suddenly the next day its too chilled. Obviously we are having hard time to decide how to dress up ourselves. Since yesterday, the weather is too cold and our dinner goes obviously to a warm bowl of comforting soup. I usually add potatoes to my soup to make them thick but for a change i tried adding dals in a simple broccoli soup.The addition of the dals in the soup makes this bowl of creamy broccoli soup more interesting and simply delicious.

To make this simple broccoli dal soup even more delicious, i have added some low fat cream to give a creamy texture to this soup. Horsegram Salad With Mixed Veggies

Salad and soups with sides, this is my theme for this week's blogging marathon coz both soups and salads are our favourite evening dinner. Since i make different soups or salads for our dinner atleast thrice a week,this theme sounds very easy for me. Today's post is also an evening dinner we had few days back with some rotis. Horsegram are very much adviced to add in your diet often if you want to reduce your weight. We Indians,cook horsegram with many spices as different dishes from gravies to spice powder. These horsegram beans are excellent source of iron, very nutritious as well. Do add this nutritious beans often in your menu and enjoy the goodness.

Horsegram salad is one of my recent favourite, this salad gets ready very quickly with simple veggies and cooked horsegram beans. I spiced up this salad simply with olive oil dressing, and this healthy salad tastes fabulous when served along with rotis or else simply as stuffing wrapped with rotis. Oven Roasted Vegetable Soup

Soup, our almost everyday's dinner needless to say that i make varieties of soups atleast thrice a week, one among our favourite is oven roasted vegetable soup. Just throw watever vegetables you have in your fridge into the oven with some herbs,just drizzle generously with olive oil and roast them. Once they gets roasted, just cook it with vegetable stock and spice it with your favourite spice powder or else simply with pepper powder and salt. Blend everything and enjoy your bowl of soup.You may wonder why am talking about soup today, i have reason to talk about it.

Instant Green Apple Pickle ~~Maharashtrian Special

I dunno how many times i have repeated these sentence but cant ignore it am gonna repeat again today, coz i missed many food events in this blogsphere coz of my stay in India for three months. An another event i missed during my vacation is Indian Cooking Challenge,a monthly event where we cook dishes from various regions of India.For this month's challenge, Srivalli gave us an incredible instant pickle from Maharashtra. Trust me,this sweet,spicy and sour pickle tastes fantabulous, usually green raw mangoes are used for making this fingerlicking pickle, but since its not the season for mangoes here i tried this pickle with green granny smith.

This recipe was shared by Varada's Mom,this pickle gets ready very easily with simple ingredients. Once i get the raw mangoes, am sure i'll try this pickle again. Varada told to dice or grate the mangoes, since i used green apple i diced them instead of grating for making this fantastic pickle. Within three days, me and my H finished half of the bottle i prepared, yes we loved this pickle very much. You can have it with anything, somehow i enjoyed this pickle thoroughly with sambhar rice.

Kambu Uthappam/Pearl Millet Uthappam

Am a health nut and am proud to be, most of our daily menu will have atleast a wholegrain it, if i make oats for breakfast, the next day i'll use brown rice for our lunch or else millets for our dinner. Yes i mix and match fibre rich,nutritious wholegrains in our menu. Sometimes none at home will notice the addition of these wholegrains in their food, i'll mask them by adding either vegetables, or in baking with chocolates etc. However we need to break our head to feed our family with health stuffs na. One among those new attempt is this Kambu Uthappam aka Pearl millet Uthappam.

Uthappam is nothing a dosa like dish made with idly-dosa batter, they wont be crispy and crepe like as dosas but as a thick pancake with toppings, we call actually uthappams as Indian pizza.Instead of usual batter, i prepared mine with pearl millet batter and this uthappam turned out extremely delicious with onion,tomato and bellpepper toppings. Uthappam is also called as oothappam which means poured appam, usually i'll make uthappams with mildly sour idli batter and we love the mild sourness in uthappams. Eggless Butterscotch Cookies

Cookies are kid's favourite, either with chocolate chunks or nuts. However if am making cookies,i'll try to add whole grains just to feed them easily without their knowledge.But this time, these cookies are almost like butter cookies, with simple ingredients these cookies are just simply like melt in mouth type of cookies. With butterscotch chips in it, these cookies are seriously very chewy and definitely a kid's friendly evening snacks.I have been searching for butterscotch chips here, but somehow i always missed the chance to get them here. But during my stay in India, i got a packet of butterscotch chips from a retail shop there, without any fail i came back home with it.This is the first time am using butterscotch chips in my baking and i found them very interesting.

Choco Chip Pull Apart Bread

Kids love bread, especially for their snacks with their favourite spread, my kids just adore Nutella spread, but  i decided not to buy this chocolate spread from stores. Obviously i replace this spread either with dark chocolate chunks or else with chocolate chips in my bakes. Pull apart bread suits prefect for evening snacks, i have already prepared varieties of pull part bread at home. Coming to this pull apart bread, the shape of this bread is just quite different from the usual one, i enjoyed making this cuties at home for my kid's evening snacks.

This bread goes for an egg, you can omit it very well with silken tofu or simply with flaxseed meal.For the past three months coz of my trip to India, i couldnt able to participate Defi Boulange, a fabulous bread baking event by Nadia and Manue. But this month i dont want to miss their incredible challenge, our this month's challenge is this Cinnamon Pull apart bread,but i just replaced cinnamon powder with chocolate chips. Fusion Quesadillas

Evening snack is very important for kids, that too after a long day in school. My kids are not expectional too, they just love their evening snacks much more than their dinner. Obviously i'll plan to make many different snacks at home instead of buying them from stores. Also French stores have varieties of biscuits,chips and sodas than healthy snacks. Its better to make snacks at home here than buying, as am a health nut i like to feed my kids with healthy stuffs in their snacks. So i'll try to add more veggies or else greens in their snacks, today's recipe is also one among those healthy snacks i have prepared during last week for my kid's snack box.

Am running my second week of blogging marathon with Kid's delight -after school snacks as theme,today's fusion quesadillas with loads of veggies, spinach and mozzarella cheese makes a filling and healthy after school snacks. You may wonder why i named this dish as Fusion Quesadillas, i have a reason for it. The stuffing i went for making this quesadillas is purely an Indian spiced masala with mixed vegetables and spinach, while the cheese i used is the famous mozzarella. Carrot Lemonade

Sunday brunch is something i would like to have atleast once a month, i truly enjoy it coz my weekend working H will have his brunch with me. Obviously if he is at home, i'll make special brunch dishes for him. He loves french toasts very much with a simple home made fruit juice for his brunch. Needless to say i'll make different fruit juices freshly for the brunch. Today i have prepared this gorgeous looking carrot lemonade for our brunch hence am posting it today as i belong to a group of bloggers who blogs twice a month on sundays, our group name is Let's Brunch On Sundays.

Coming to this carrot lemonade, this super fresh drink goes for easy breezy ingredients, just a carrot, lemon juice and some grated ginger with sugar makes this beautiful drink. When served with ice cubes, you can enjoy this lemonade thoroughly during summer, yes this drink is definitely a summer drink , a fantastic healthy thirsty quencher.

My today's guest host is one among a newbie blogger who i have crossed recently, one fine day she pinged me asking whether she can join this event. Who can resist to this friendly request? i said immediately Yes. When she pinged me i was India, with a nasty net connection i couldnt able to chit chat with her for a long.Thank god she was very humble and accepted immediately the slot i suggested to her. Then later once i came back home, i pinged her and we talked for a while. Senai Kizhangu Thogayal/Elephant Yam Chutney/Karunai Kizhangu Thuvaiyal

If you are searching for a different, an easy breezy and a vegan chutney, just you need to go through this post. This thogayal aka chutney goes for the most itching and most hated vegetable Elephant yam. I have seen people who never touched this vegetable in their life as they dont like peeling or cooking with this yam. But trust me, this thogayal will change their opinion about this vegetable, this dish goes for simple cooking and the tamarind used in this dish makes this dish more delicious and tangy. A prefect side to enjoy with any dish, eventhough i enjoyed thoroughly this thogayal with curd rice.

Garlic Coriander Naan

Whenever you talk about naan, am sure you would have heard lot about Garlic naan, after butter naan this flavorful garlic naan is very much popular among the other varieties of naan. After making a baked naan and a fusion naan, finally am posting today a simple and a very flavourful garlic coriander naan.Garlic and coriander,this combination works absolutely fabulous for making garlic butter,needless to say this combination also works very much in Naans too.

Today is the final day of this week's blogging marathon, as i chosed different Naan as theme for this week's blogging marathon am posting this very delicious garlic coriander naan. We enjoyed thoroughly this fantastic naan with our family favourite channa masala for our dinner.

Leek Naan

When i chosed Naan as theme for this week's blogging marathon,i seriously want make some flavourful simple spring onion naan. But last weekend when we went to our nearby farmer's market, i couldnt spot out green spring onions, immediately i dropped that idea and went towards the leek. Leek is a vegetable that belongs to onion and garlic family.Since leek have a mild onion like taste, i thought of using it in this Naan.The edible part of the leek are the white base of the leaves. Usually Leek is used for making vegetable stock as they add flavour to them. Leek can be boiled,cooked,or can be eaten raw in salad. However i cant tolerate leek as raw, usually i finish them by making a warm bowl of leek potato soup or else i'll make quiche with it.

This leek naan came out extremely well with a wonderful flavor, the taste was almost like onion naan. Just with some spicy masala or kurma am sure you can definitely have a satisfying meal with these flavorsome Naans. Give a try to this leek naan, am sure you guys will definitely love it.In case if you dont get leeks, you can replace them very well with spring onions or garlic chives.

Baked Aloo Naan/Baked Potato Stuffed Naan

Naan is one of the popular yeasted flat bread usually prepared in tandoor stove, but trust me you can make them very well at home either by baking through oven or simply in a tawa. You can prepare naan either with yeast or else simply with baking soda and baking powder if you dont tolerated yeasted dough. However the choice is yours and you can make your naan at home easily just with simple basic ingredients. Earlier before starting my blog, i usually buy Naans from an Indian store, then a friend of mine was kind enough to share the tips for making naan at home since ever i tried my first naan at home i never bought them from stores. Nothing can beat the homemade na. After two months break to Blogging Marathon, today am running with other marathoners my first week of 38th blogging marathon.

Am very happy to join the gang after a small break, my theme for this week's blogging marathon is going to be different naans. Rose Malai Jamun - A Virtual Birthday Treat To Priya Ranjit

Today is a celebration day for me, yes am celebrating my sister's birthday virtually. She is none other than my sweet sister Priya Ranjit, who blogs at Cook Like Priya. She is not only a blogger, a fantastic friend, a down to earth person, a jovial darling who never fail to make you laugh with her instant jokes.We, a bunch of my co-bloggers aka friends joined our hands together to celebrate her birthday virtually. Eventhough we live in different countries,the distance between us may separate us but the love we have for each other is just growing day by day. The Theme for this virtual birthday treat is rose colour dishes. Immediately i thought of making beets kheer,rose milk and list goes on. But finally i went for making an interesting fusion dessert with gulab jamun,malai and Rooh Afza , sounds quite innovative na. Roof Afza is a non alcoholic concentrated squash sold commercially as a syrup to flavor sherbets,cold milk drinks,icecream and many more cold desserts.

Trust me,this rose malai jamun was a big hit at home and we couldnt stop ourself having this juicy,spongy,very delicious rose malai jamun. If you want to make a different sweet for a celebration, i'll definitely advice you to give a trial to this incredible sweet. In case if you dont like rose flavour, just skip the addition of roof afza syrup and just enjoy this sweet as Malai jamun.

Mawa Gujiya

Mawa Gujiya is a very popular and common North Indian sweet prepared during festive season. Gujiya are also known as Puli Pitha, Karjikai,Kadubu, Somas or even as Indian Empanadas. Eventhough they look almost the same as half moon like shape, they are made with different stuffings. Mawa Gujiya goes for khoya stuffing,the famous milk solids usually prepared by slow cooking full fat milk in a pan for hours which involves constant stirring. If you dont have much patience to prepare khoya in the traditional way, you can easily get them from stores.

Coming to Gujiyas,this Indian empanadas is prepared with a maida dough, stuffed later by mawa stuffing.These deep fried beauties are quite addictive and the stuffing is just simply out of the world. When conserved in an airtightened jar, gujiyas can stay prefect for many days in room temperature. But trust me, these gujiyas are very much delicious and addictive to store them for a long time. Baking has became a passion for me, if i feel stressed or very happy the first thing i want to make is to bake something. If my oven can speak, trust me it will cry. Sometime i can bake for a whole day, yep i love baking that much. You would have noticed that am a part of many baking events going around in this immense virtual world. No doubt that i love hosting baking event in my blog as well.Am hosting Bake Fest, a fabulous baking event by Vardhini of Cooks Joy during this whole month. This event is all about baking, just dedicated for baking.
