Bottlegourd,Chickpeas & Sesame Rice

Most of my readers know very well, i love any sort of one pot meal anytime of the day..I shared so many quick one pot meals till now, here comes one more addition to that incredible collections of flavourful,easy breezy rice..I prepared this great looking rice two days back for our lunch simply with potato chips, needless to say how flavourful this rice would be, with simple ingredients this rice goes for a quick and simple preparation, you just need a special spice powder to spice up this wonderful looking rice...You can carry very well this rice as your lunch box menu...Give a try to this delicious rice friends, am damn sure you will definitely love this super flavourful rice with bottlegourd and chickpeas.


2cups Cooked rice
1no Onion (chopped)
1cup Bottlegourd (cubed)
1cup Cooked chickpeas
1/2tsp Mustard seeds
1/2tsp Urad dal
Few curry leaves
Oil
Salt

To Grind:
1tsp Cumin seeds
1tsp Channa dal
1tsp Peppercorns
1inch Cinnamon stick
2nos Cloves
2tsp Coriander seeds
3nos Dry red chillies
2tbsp Sesame seeds

Heat few drops of oil, roast all the ingredients given in the list 'To grind',one by one until they turns golden brown, grind them as fine powder and keep aside..

Heat enough oil, lets splutter the mustard seeds,urad dal, curry leaves, add immediately the chopped onions, sauté for few minutes,add immediately the bottlegourd and cook for few minutes with salt or until they turns soft..

 Add the chickpeas, grounded powder and saute again for few seconds, now add the cooked rice, toss gently everything until the rice get well mixed..Serve hot with papads.
