Mint & Pumpkin Seeds Spice Powder

I love homemade spice powders, they are quite handy to enjoy just with rice or either as side dish with idlis or dosas, my recent favourite spice powder is this mint and pumpkin seeds spice powder, since few months i couldnt stop myself gathering seeds from pumpkins,butternut squash or with melons, i wash them thoroughly and left aside to get dry completely which i conserve in an air tightened box for further use, i have already prepared many spice powders using many seeds and this mint pumpkin seeds spice powder is one among those flavourful spice powder...This spice powder tastes fabulous simply with rice and also very useful for spicing up many stir fries, stay tuned friends i'll post soon a potato roast which i cooked with this spice powder..

Mint & pumpkin seeds powder

2cups Mint leaves
1/4cup Coriander seeds
1tbsp Urad dal
5nos Dry red chillies
1tbsp Cumin seeds
1tbsp Peppercorns
1/4cup Pumpkin seeds
2tbsp Dessicated coconut
Salt
Oil

Dry roast the mint leaves until a nice aroma comes out, heat few drops of oil, roast the coriander seeds,urad dal,dry red chillies,cumin seeds,peppercorns, pumpkin seeds until they get well roasted, finally add the dessicated coconut,stir for few seconds and put off the stove..

Now take the roasted spices,roasted mint leaves in a mixie and grind as bit coarse powder...Store the spice powder in an air tight container and enjoy with rice..

  25. So funny. Pumpkin Seed powder was just on Dr. Oz as something to help you sleep!!
    I LOVE LOVE pumpkin seeds & had to order them in Bulk. Whole Foods keeps jacking up the prices on my dear little zinc bombs.
