Savoury Bellpepper & Broccoli Cake

I tasted savoury cake for the first time at one of our family french friend's birthday party few years back, i got hooked immediately to those savoury cake which she prepared with carrots and chicken..I got her recipe immediately,later back home i tried it simply with zucchini and feta cheese,we just loved it, from that day onwards i tried out making savoury cake with many variations by mix and matching veggies and meats..Personally i felt that i can feed easily my small family with any sort of veggies by making this savoury cake and serving them either for their lunch or for dinner..

Yesterday i prepared this wonderful looking savoury cake with roasted bellpepper,sauteed broccoli and onions with cornmeal and all purpose flour...I served this savoury cake warm simply with a lettuce tomato salad and we had a filling,delicious and healthy dinner..You can add any sort of veggies to make this cake more healthier and colourful..Kids will definitely love this spongy savoury cake for their dinner or lunch with some grilled meats or simply with their favourite salad...This cake goes directly to Srivalli's Breakfast Mela and to Creative Concoctions#4 - Cooking With Olive oil hosted by Ivy..

Savoury cake

2cups Broccoli (chopped as small florets
1cup Roasted red bellpepper (chopped)
1no Onion (big & chopped finely)
1tsp Parsley leaves (chopped)
3nos Eggs
1cup Cornmeal
1+1/2cup All purpose flour
1tsp Baking powder
1/2tsp Baking soda
1/2cup Olive oil
1cup Buttermilk
Pepper powder
Salt
Butter for greasing the cake mould

Preheat the oven to 350F..Mix the flour,cornmeal,baking powder,baking soda,salt,pepper powder together and keep aside...Beat the eggs with olive oil until they turns pale, meanwhile heat few drops of oil in a pan,saute the onions and broccolis along with parsley leaves until the veggies gets partially cooked...

Now add the buttermilk to the egg-oil mixture, whisk for few minutes, gradually add the sauteed veggies,chopped roasted bellpepper, give a quick stir...Add now the dry ingredients to the wet ingredients, mix gently and pour this mixture to the greased cake mould..Bake in middle rack for 30-35minutes or until the skewer inserted comes out clean..

Serve warm with a simple salad or grilled meats, this cake can be conserved for 2-3days in fridge,warm it in microwave oven while serving...
