Lime Buttermilk Pound Cake

Citrus flavoured cakes aren't that much liked by my family members until i tried Eggless Lemon Poppyseeds Muffins long back, now i can make watever with lemon or lime..While going again through Deeba's Passionate about Baking, i got this fantastic pound cake which totally sounds prefect for me immediately, to put my hands again in making citrus flavoured bakes...Without any hesitation i prepared making this cake two days back for our snacks,i enjoyed making and while baking the aroma of this cake filled my home with a beautiful smell..Its quite an easy breezy cake, which gets ready very quick and also gets vanished quickly..We loved this cake very much..Loved the lemony sugar glaze over this cake eventhough i didnt prepared them much coz i know none at home will love this glaze,yep i wasnt wrong my teddies just removed the glaze before enjoying their cake...Thanks a ton to Deeba again for this beautiful,spongy and fabulous cake.

Lime pound cake

1+1/2cup All purpose flour
2nos Eggs
1/2cup Butter (room temperature)
1cup Sugar
1/4tsp Baking soda
1tsp Baking powder
1tsp Vanill extract
1cup Buttermilk
Juices from 2 limes
1tbsp Lime zest
1/4tsp Salt

Preheat the overn to 350F..Combine together the flour with baking soda,baking powder and salt...Beat the butter and sugar together until they turns soft, add the eggs one by one, add the vanilla extract, lime juice and lime zest, add slowly the flour,buttermilk and turn as smooth batter...Pour the cake batter in a greased mould or a silicon round mould and bake for 25-30minutes until the top turns golden brown....

Lime sugar glaze:
1/4cup Confectioner's sugar
1tsp Lemon juice

Mix together the sugar and juice and turn as thick glaze, if its thin add more sugar..

Remove the cake from the mould,pour the glaze over the cake or spread evenly over the cake,decorated with chocolate sprinkles over the cake..Enjoy with a cup of coffee...

  1. I love anything with citrus flavour. I haven't made a lime cake as limes are quite expensive but I am sure this cake is to die for!!!

  22. Wonderful recipe yet again Priya! Tried it by halving the ingredients & made it in a small silicone 5" teddy bear mould for my son...didnt need to use much of the buttermilk though, but the bottom was slightly browned, maybe bcoz of the OTG that i use...but taste was heavenly!! thank u for sharing this simple recipe, its a perfect tea time cake :)
