Chocolate Christmas Cake - SSB Challenge

For November's Sweet and Simple Bakes challenge is Chocolate Christmas Cake.. its really a great opportunity for amateur bakers...Started by Rosie and Maria, this month challenge is christmas cake..This cake tastes really awesome, one of the best cake i have tasted...

1cup Soft Butter
1cup Soft Brown sugar
2eggs
2cup Self raising flour
2tbsp Cocoa power
400g Luxury Mince meat
1/4cup Sultanas n raisins
1/2cup Blanched almonds chopped
1/4cup chocolate chips
Preheat the oven for 160C... when baking a fruit cake, u must need to prepare the mould before starting to mix the ingredients...cut a baking paper as round shape, lightly butter the inside o the tin..place the baking paper inside the mould...

Place all the ingredients n beat together for few minutes..pour them into the baking paper n bake them for 2hours r else until a skewer inserted into the centre comes out clean...leave the cake for few minutes n let them cool in wire rack completely...
For mincemeat(fruits):
I prepared them at home..oops i have forgotten to take a pic..will post them soon...
450g Mixed dry fruits( i used dates, bananas, ananas, apricots)
100g Melted butter
100g Grated apple pieces
100g Soft Brown sugar
50g Nuts ( i used walnuts n pecans)
100g Cherries
1tsp Lemon rind
1tsp Pamplemousse rind
1tsp Orange rind
1tsp Mixed spice
1/2tsp Cinnamom powder
1/2tsp Grated nutmeg
4tbsp Rhum
Add all the ingredients into a large bowl and soak overnight covering with a clean cloth. Mix thoroughly through together either with a large spoon or clean hands. Cover over with a clean tea towel and leave to stand for 24 hours giving the mixture a good stir as you pass by. Next day pack the mincemeat into sterilised jars, and top with greaseproof paper jam covers. Seal the jars tightly and store in a cool place...
If u dont like alcohol can add orange juice r apple juice..

For the first time, i prepared fondant at home...i made simple chocolate butter cream to decorate the cake n finished with fondant pieces...

meat in a cake? wow.. very new to me. sorry.. i had posted comment for kadai paneer in your prawn dish page :) one suggestion priya.. when i click post comment, it takes a long time to load the comment pop up window.. sometimes, clicking "post a comment" opens like 2 or 3 comment page windows... it will be nice if u have the regular default comment page instead of the pop up thing.. just an idea.
