Vegan Pumpkin Walnut Muffins

Pumpkin helps build healthy hearts because it's high in potassium. One cup of pumpkin has 30 calories..Its pretty orange colour also signals that pumpkin is a rich source of beta-carotene, which helps keep kids' skin bright and eyesight sharp, and encourages overall good health. Pumpkins are 90% water.. the pumpkin will get cooked very quickly. It may be cooked with cinnamon, nutmeg and almonds,Apart from the flesh, even the seeds of pumpkins boast of a large number of nutrition benefits...Pumpkin is very rich in carotenoids, which is known for keeping the immune system of an individual strong and healthy. Beta-carotene, found in pumpkin, is a powerful antioxidant as well as an anti-inflammatory agent. It...Walnuts are a high source of essential unsaturated fatty acids such as the alfa-linoleic acid. Their content in proteins and vitamins is good, especially in vitamins B and E...This Pumpkin muffins is vegan coz i used flax seed meal n canola oil instead of eggs n butter..recipe starts like this..



2cup All purpose flour
1cup Pumpkin puree
3/4cup Sugar
1tsp Baking powder
1/2tsp Baking Soda
1/2tsp Cinnamon powder
1/2tsp Nutmeg powder
1cup Canola Oil
1/2cup Walnut pieces
2tbsp Flax seed meal
4tbsp Luke warm water

Whisk sugar, oil,baking powder, baking soda, together for a while, make a thick paste with flax seed meal n luke warm water n add them together with the sugar-oil mixture...whisk everything for few minutes, add the pumpkin puree , cinnamon powder, nutmeg powder..n beat again everything nicely..now add the flour n walnut pieces n stir everything continously, until they turns as sticky thicky batter...


Grease the muffin mould, meanwhile preheat the oven at 350F for 10 minutes...pour the batter in the mould..arrange them in the middle rack n bake them for 20 -25 minutes...let them cool..

Chocolate glaze : just heat the few chips of dark chocolate in a microwave bowl for few minutes, add bit water n glaze the muffins, use the walnut pieces to decorate the top of the chocolate glaze... these melted chocolate were really yummy while having these muffins..

Yummy, spongy Muffins r ready to have!!!
