RM#2 Day 13 - Carrot Curd Rice

Curd Rice, Who will say no to curd rice..everyone have they traditional way of preparing curd rice, some may prepare just by tempering while others add some ginger, green chilly wit peanuts r with cashew nuts, to make them bit rich n healthy i have added grated carrots, it will be quite easy to feed the whole family even they r picky eaters like mine...adding carrots to curd rice made them colourful n also tasty...here we go...



1cup Cooked rice
1cup Curd
2tbsp Coriander leaves chopped
Salt
Oil

For tempering:
1/4tsp Mustard seeds
1/4tsp Urad dal
1/4tsp Channa dal
1/4tsp Cumin seeds
2nos Dry Red chillies
1/4tsp Asafeotida powder
1no Green chilly slit opened
2tbsp Raw peanuts
1tsp Ginger chopped
3nos Curry Leaves
1/4cup Grated carrot

Heat oil n add the mustard seeds, urad dal, channa dal, cumins seeds, red chillies n asafoetida powder, let the splutter, add now peanuts, slit opened green chilly, chopped ginger, curry leaves...stir them until the peanuts turns brown...add the grated carrot with pinch of salt, cook everything in simmer until the grated carrots turns tender...meanwhile add the salt n chopped coriander to the curd..mix well until the salt get dissolves, add the tempering to the curd n serve them...

Tasty, healthy carrot curd rice is ready!!
