Carrot N Leeks Soup

Leeks are vegetables that are closely associated with onions and garlic. The leaf of a leek would form a light green, tight cylinder of sheaths. These may be used in cooking to prepare soups and salads. They may be eaten raw or cooked. The lower leaf portion and bulb of one cup of boiled leeks would provide the body with 38 calories, 9 grams of carbohydrates, 1 gram of protein and 12 milligrams of sodium. The orange-colored taproot of the carrot contains a high concentration of beta-carotene. Beta-carotene is a substance that is converted to vitamin A in the human body.Beta-carotene is also a powerful antioxidant effective in fighting against some forms of cancer, especially lung cancer. Current research suggests that it may also protect against stroke, and heart disease.Carrots are also a very good source of dietary fiber, vitamin C, vitamin K, folate and manganese, and a good source of vitamin B6, pantothenic acid, iron, potassium and copper.
