We love briyani during anytime of the day, obviously i will definitely make biriyani atleast twice a month especially on week-ends. Most of our Sunday lunch will be either biriyani or pulao. Served along with a rich, creamy curry or side dish, one can finish their lunch or dinner happily without any fuss. I have already dished out couple of pulao and my space have varieties of pulao cooked either with vegetables, seafoods or meats. However my today's recipe is one of easiest pulao one can dish out quickly without any hassle. Even if you ran out of vegetables or meats, this dish will make everyone happy as this dish is full of flavors. With a handful of cashewnuts, garam masala and homemade coconut milk is quite enough to prepare this pulao.
Am running this week's blogging marathon with Dish under 30 minutes as theme. After two delicious dishes which takes hardly less than 30 minutes to get ready, here comes an another one pot meal with my favourite nuts aka cashew. Cashew nuts makes this simple pulao more rich with their incredible nuttiness, be generous to add cashewnuts while making this pulao. And to bring the flavor to this pulao, the soaked basmati rice is cooked completely with thick homemade coconut milk. Needless to say that this pulao will definitely please anyone's tastebuds easily than you can imagine. You can also add a mixture of nuts to make this same pulao even more richer. Enjoy this pulao with some rich paneer or chicken based curries as side dish.
1+1/2cups Basmati Rice
1/2cup Cashew nuts
2nos Onions (chopped lengthwise)
3cups Coconut milk
1tbsp Garam masala powder
2nos Whole spices (bayleaves, cloves, cinnamon stick & cardamom)
1/4tsp Cumin seeds
Salt
Oil
Soak rice for 15 minutes,drain the water and keep the rice in a colander.
Heat enough oil in the pressure cooker and fry the whole spices,cumin seeds,add the cashews and fry until they turns golden brown.
Immediately add the onions saute until they turns transculent, now add the garam masala and fry until the raw smell goes away.
Finally add the coconut milk and bring to boil.
Add the rice,salt and cook everything in pressure cooker with lid closed, cook in simmer for few minutes until the rice get well cooked.
