If you are looking for a prefect baked treat to finish your over ripen bananas, you have to look at my today's post. This muffins makes an excellent breakfast muffin or a after meal dessert or else an evening snack to enjoy with a cup of coffee. These muffins are completely butter free, yes i skipped butter. Trust me these muffins came out extremely spongy with bit dense because of Spelt flour. However you wont miss the sponginess in this muffins. Banana and chia seeds both together works absolutely incredible for baking out this easy breezy muffins. If you dont have spelt flour, dont worry, just replace it completely with Whole wheat flour. I have been experimenting to bake out some simple baking treats with Spelt flour and trust me i have been enjoying completely to bake some incredible bakes with it. And chia seeds have its own place in my pantry as well. Though we love chia seeds in pudding, my kids enjoy and love chia seeds in muffins and in quick breads.

Since i like challenges, i couldnt stop myself to join this group. Hence am here with a beautiful baked treat aka Chia Seeds Banana muffins for this month's challenge, if you want to join in this group do let me know. And coming to this muffins, its quite an excellent snack muffins to pack in your kid's snack box. These muffins can be baked as vegan as well. Just mix and match the ingredients to bake out these fantabulous muffins.
1cup Spelt flour
1/2cup Whole wheat flour
1tsp Baking powder
1/2tsp Baking soda
2tbsp Chia seeds
1cup Banana (mashed)
1 Egg
1/2cup Oil
1/2cup Yogurt
1cup Honey
1tsp Vanilla extract
Take the spelt flour, whole wheat flour, baking powder, baking soda in a bowl, sift twice and keep aside.
Now take the mashed banana, egg, oil, yogurt, honey and vanilla extract in a bowl. Whisk well until everything gets well mixed.
Add the chia seeds to the sifted flour.
Mix the dry ingredients to the wet ingredients gently, until the mixture turns smooth.
Preheat the oven to 350F, line a muffin tray with muffin paper.
Spoon the muffin batter to the already prepared muffin tray.
Bake for 20-25minutes until the crust turns golden brown.
Remove the muffin tray from the oven, let it cool completely.
Enjoy with your favourite drink.
