Dhuska is a well known deep fried snack from Jharkhand. This fried snacks are eaten all over Jharkhand which calls for rice, channa dal as two main ingredients. Actually, earlier Jharkhand cuisine is quite unknown cuisine for me. Before a year, for an event i cooked a dish from this cuisine and totally enjoyed going through their cuisine. Learned few recipes through google master and have bookmarked few from this cuisine as much i do with other unknown cuisine. And for this month's Shh Cooking Secretly, a monthly event started by me, which is now hosted by Mayuri Patel. We are cooking from Jharkhand, and i have been paired with Priya Mahesh of Priyas Kitchen . Priya was kind enough to give me my two ingredients which is quite a staple food for a South Indian like me. Yes my two secret ingredients are Rice and channadal.
I have been looking for a chance to dish out Jharkhand traditional dish aka Dhuska and finally i did with my both secret ingredients. This Gluten free fritters are served with different side dishes, however chutneys works awesome with this fried breads. Yes its a sort of Indian bread, before trying this recipe at home i was qutie skeptical about this dish. But trust me this bread came out extremely puffy and dangerously addictive. Dhuska is mostly made in market area stalls where people can enjoy its as a snack. And this dish is quite rare to find in all restaurants. You can enjoy this dish from breakfast to dinner, and i had this fried breads for my lunch with dal. Traditionally green peas are added in this dish and i completely skipped it, however you wont miss green peas in this recipe. But still if you want to add green peas or anyother vegetables just add them and dish out this incredible Dhuska.
1cup Rice
1/2 cup Split Bengal Gram / Chana dal
2 Green Chillies (chopped)
3tbsp Coriander Leaves (chopped)
3 Garlic cloves
1small piece Ginger
Salt to taste
1/2 tsp Turmeric powder
Oil(for frying)
Wash and soak the rice and the channadal separately for 6 hours or overnight.
Grind the rice and the channadal along with the garlic and ginger in a grinder into a smooth batter.
The batter should be of dropping consistency.
Add the salt, turmeric powder, chopped chillies and coriander leaves.
Mix the batter, let is stand for few minutes.
Heat oil in a pan, add a ladle of batter and fry until they turns golden brown.
Serve it hot with spicy chutneys.

I loved this popular Jharkhand dish, can't believe it was so easy to make it. Your dhuskas have puffed up perfectly. Serving it a chutney is a good option.
