Potatoes are our family favourite vegetable, we can survive for many days with anything cooked with potatoes. Obviously potatoes have their own place in my vegetable basket. My today's post is a well known curry dish which is quite popular in North India especially in the state of Uttar pradesh. Its a breakfast dish served along with puffed Indian fried breads aka pooris. And this dish is one of easiest side dish you can prepare with less efforts. Since its No Onion No garlic recipe, this dish gets ready easily for a quick weekend dinner or a simple weekday's breakfast. With usual spice powders and dry mango powder, this curry will makes you happy to relish with parathas or rotis.

My today's post is the last post for this week's theme, which is quite a delicious curry. Crumbled and slightly mashed potatoes when cooked in a spiced tomato based curry makes this interesting Aloo rasedar. Usually Aloo rasedar is prepared with both onions and garlic but trust me if you want a delicious curry without garlic and onion for your fasting day, this curry will definitely please your tastebuds.
3nos Potatoes (cooked & crumbled)
2nos Tomatoes (blanched & pureed)
2nos Green chillies (slit opened)
1tsp Red Chilly powder
1tsp Garam Masala
1/4tspTurmeric powder
1/4tsp Dry mango powder/Amchur powder
1tsp Ginger (minced)
Coriander as per need
Dry fenugreek leaves/Kasoori methi
Oil
Salt as required.
Heat oil in a pan, add the minced ginger, green chillies and saute until a nice aroma comes from.
Add the pureed tomatoes and bring it to boil.
Then add turmeric, chilli powder, dry mango powder and garam masala and fry for some time.
Add enough water and cook everything in medium flame for few minutes.
Finally add the mashed potatoes and cook for a while. Once the gravy gets bits thick, put off the stove.
Add the crushed dry methi leaves, give a stir.
Add the chopped coriander leaves as per need.

Aaloo rasedar sound perfectly made , this is one dish which I like without onions and garlic . The use of kasoori methi must be giving it a twist and an excellent taste . Served with pooris Aaloo rasedar must have made a delicious meal .

ReplyDeleteThis aloo rasedaar makes a wonderful combo with pooris and rotis. This lip smacking curry ca be done quickly with out the onion- garlic addition.
