If you love chocolate, this cake will definitely please you. And trust me if dont like coconut in your bakes, then this cake will definitely tickle your tastebuds. While i was looking for a different baked goodies from Norwegian cuisine, i was surprised to see this Ryttarkaka, aka sticky chocolate cake with coconut topping. Though i dont have great fans of cake or cookies baked with coconut at home, i was very much tempted to bake this cake. But one thing that pulled me to bake this cake is the chocolate brownie cake which is the most important base for this Ryttarkaka . Yes this cake calls for a brownie batter which is later topped with coconut topping. Obviously i gathered all the ingredients and baked this fabulous cake few days back at home.
Am running this week's blogging marathon with Scandinavian recipes as theme, after an easy Norwegian apple cake, my today's post is this fabulous sticky chocolate brownie cake topped with a fabulous cocont topping. I grabbed this cake from Scandi Kitchen, the author of this blog says not to over bake the cake to long as the base should be gooey. But mine turned as brownie cake without that gooey texture.Seriously its doesnt matter for us. And i have made few changes in topping ingredients as i felt that topping was very much sweet for us. Apart from it i sticked as much as the original recipe. Kids enjoyed thoroughly this cake, honestly i saved two slices for my Husband before the cake gets vanished.Be aware, this cake is dangerously addictive.
For Brownie:
1cup All purpose flour
1/4cup Unsweetened cocoa powder
1cup Sugar
100grams Dark chocolate (chopped roughly)
4 Eggs
150grams Butter
1tsp Vanilla extract
Salt (a pinch)
Topping:
100grams Butter
1/4cup Light brown sugar
1/4cup Golden syrup
150ml Cream
1cup Desiccated coconut
Grease and line a baking paper on a square or retangular baking pan. Preheat the oven to 350F.
Melt the butter in a pan, add the chopped chocolate and stir, once the chocolate gets melt, put off the stove.
Meanwhile whisk eggs and sugar until they turns light and fluffy. Add the vanilla extract and give a stir.
Take the flour, cocoa powder and salt and sieve it twice.
Add the egg-sugar mixture and melted chocolate mixture to the dry ingredients and fold until they turns smooth..
Pour the mixture to the already prepared pan and bake for around 10-12 minutes until just setting.
Meanwhile, in a saucepan, heat all the ingredients for the topping together.
Pour the topping to the cake and bake for 10minutes until they gets a golden colour.
If you want your chocolate cake gooey, simply dont leave the topping for 10minutes to bake remove the cake quickly.
Leave to cool down, cut them as slices.
Enjoy.

The cake sounds interesting , and the flavors are a unique combo , wish it wasn’t overlooked with eggs ! It’s a little difficult to substitute 4 eggs !
