My family loves egg curries very much, obviously i look for different versions of egg curries. If i get a different egg curry from any source, i dont hesitate a second to dish out those fingerlicking curries with eggs to please my family. My today's recipe is from my friend's mom who makes delicious Srilankan's foods at home. She was a home maker earlier but now she is running a Srilankan fast food in Paris. When i picked Sinhalese Recipes as theme for this week's blogging marathon i couldnt stop myself pestering her to get some interesting dishes from her. While we were talking, she shared her family favourite egg curry. And i prepared my friend's mom special Egg curry at home and trust me everyone at home enjoyed this lipsmacking flavorsome curry with hot piping rice.
Srilankan's egg curry can be prepared in two ways, one method calls for frying eggs in oil before dropping them in curry and the second one is to dunk the hard boiled eggs directly to the boiling curry. However i followed my friend's mom method which goes for frying eggs in hot oil until they turns brown. This method involves deepfrying eggs, since i dont want to deep fry them, i opted for shallowfrying and this works awesome. You can simply prepare this super aromatic egg curry for any occasions as this dish is very quick to prepare.
5-6 Hard boiled eggs
2nos Onions (chopped roughly)
Few curry leaves
2nos Whole spices (cardamom, cinnamon,cloves,bayleaves)
1 Pandan leaf
1tsp Ginger
1tsp Cumin seeds
1/2tsp Fennel seeds
1tsp Peppercorns
1 Tomato (chopped)
1/2cup Grated coconut
3 Green chillies
1/2tsp Turmeric powder
Oil
Salt
Heat enough oil for shallow frying, drop the hard boiled eggs and fry them evenly until they turns golden brown, remove and drain the excess of oil with a paper towel.
Heat oil, fry the curry leaves, roughly chopped onions until the onions turns transculent.
Add the whole spices, ginger, cumin seeds, fennel seeds, peppercorns, chopped tomatoes, turmeric powder,pandanleaf and grated coconut and fry everything in simmer until a nice aroma comes from.
Take this fried spices in a jar and grind everything as a fine paste.
Pour this grounded paste to the pan, cook in simmer for few minutes.
Pour enough water, bring boil everything. Add the slit opened green chillies,fried eggs and cook until the curry turns thick.
Put off the stove and serve warm with rice.

ReplyDeleteI love it. :) I am a egg curry lover and we used to have this when we were in New york. There was an awesome srilankan restaurant. But homemade version must be super delicious.
