Moth Beans is known as Matki/Dew beans,these beans are used very much in Indian cuisine. Usually used in preparing many nutritious dishes, this moth beans are extremely nutritious and protein rich. Mostly used in making Misal Pav, Usal, this moth beans works awesome to prepare some fantastic dishes as well. Moth beans have their native from Indian and Pakistan. Moth beans plant grows wonderfully in dry sandy soil, hence these plants are found abundantly in Rajasthan and its grown for both human consumption and fooder. This beans can be cooked and eaten as a vegetable and can also be processed as dals to preserve them for a long time. These beans can be prepared in sprouts and also be cooked as any other dal or beans.
In India, green pods are eaten as a vegetable, and the tiny seeds are eaten whole or split.Traditionally in India, The seeds are fried to make them into a crunchy snack.Also Moth Bean can be assimilated as a flour to prepare south Indian foodie delights like Idli and dosa.Mothbean is one of the major protein food source. It is rich in protein, calcium in it can make it an excellent supplement to cereal diet. Especially for people who are unaware of the problems that mal-nutrition can push them into. And not to forget that these beans are advised to consume regularly especially for many protein deficient patients. Moth Bean is a cheap source of nutrients and forms a specific and perfect diet. You might have noticed that am running a month of blogging marathon with Protein rich dishes as theme, hence am posting this lipsmacking khichdi for this month's theme.
1cup Rice
1/2cup Soaked moth beans
1/4tsp Turmeric powder
1no Onion (chopped)
1no Tomato (chopped)
Few Curry leaves
1/2tsp Cumin seeds
1/2tsp Mustard seeds
1/2tsp Urad dal
2nos Dry red chillies
2nos Green chillies (slit opened)
5nos Garlic cloves(crushed)
1tsp Ginger (chopped finely)
Salt
Oil
Take together the washed rice, soaked moth beans,finely chopped ginger,turmeric powder, salt in a vessel, add 3 cups of water and pressure cook them for 3whistles.
Heat the enough oil and let splutters the mustard seeds, urad dal, dry red chillies,the cumin seeds,slit opened green chillies, curryleaves.
Saute the chopped onions and crushed garlic cloves until the onions turns transculent.
Once the pressure get released,add this mixture to the tempered veggies to the cooked rice-moth beans mixture, stir for few minutes and put off the stove..
Serve hot with pickle,curd or spicy side dishes.

I just had my dinner but that khichdi is looking so inviting that I would want to try it now. Btw I love moth beans and always make Multani Moth Kachori with it.

ReplyDeletePriya, you've just brought back loads of sweet memories. We normally make sprouted moth to go with khadi and rice. Nowadays I don't get moth in Mombasa. Your delicious looking khichdi has just reminded me on how much I miss these nutritious beans.
