My family have many Authentic dishes, born as a Pondicherrian, both my maternal and paternal grandma's have their own traditional dishes. My paternal grandma's recipe book is a real treasure and one of her signature dish is Paal poli. Later my mom makes this ultimate sweet for us as after school snacks, obviously its her favourite as well. And this paal poli is my childhood favourite and now its my kids favourite. Though you can prepare this same Paal poli with maida or wheat flour puris or else with leftover pooris, the traditional puris calls for semolina aka rava puris soaked in nuts loaded saffron flavored masala milk. This sweet is my family special dish, this authentic sweet when served chilled makes an absolutely delicious dessert for a get together. However kids love this rich paal polis, you can prepare them earlier a day to relish this pooris dunkened in fantastic milk flavored with saffron strands and chopped nuts.
You can prepare this ultimate sweet for any occasion and this Paal poli can please anyone's tastebuds. Apart from rolling the puris and frying, this sweet gets ready very easily. Whoever have sweet tooth will enjoy thoroughly this irresistible paal poli. Though this dish is well known in all over Tamil Nadu, even this dish is owned by the Pondicherrians. Paal polis can be prepared with coconut milk sweetened with sugar and nuts as most dishes from Pondicherry cuisine calls for coconut. Am dedicating this special dish to my mom for teaching me the value of life and for being my inspiration for everything. She never failed to amuses us, she is one of the best example of tolerance and patience. She is my walking miracle. Love you Amma.
For Pooris:
2cups Rava (fine quality)
1tsp Melted ghee
Salt
Oil for frying
For Milk:
1liter Milk
1/2cup Sugar
1/4cup Almonds
Few saffron strands
1/2tsp Cardamom powder
Chopped nuts
Take the rava in a bowl, add the melted ghee, salt and knead everything as smooth dough with enough water. Keep aside for half an hour.
Divide the dough as small balls, dust the balls and roll everything as medium sized pooris.
Soak the almonds in warm water, peel the skin and grind as fine paste.
Heat enough oil for frying, drop the rolled pooris and fry on both sides. Remove the pooris and drain the excess of oil.
Meanwhile bring boil the milk with sugar, reduce the flame and cook for a while.
Now add the almond paste, saffron strands and cook until the milk gets reduces half.
Now add the fried pooris to the flavoured milk.
Let it sit for a while until the pooris gets well soaked.Top it with chopped nuts.Arrange them in fridge.
Enjoy chilled.
