X is one of the complicate alphabet to pick a baking dish with. Obviously i couldnt think more than baking Espresso blondies so that i can rewrite as Xpresso blondies as title to stick with this month's blogging marathon's theme. Blondies are known as blond brownie is a rish dessert. Its ressembles quite like the traditional chocolate loaded brownies but blondies are prepared /baked without cocao powder and its contains brown sugar hence this dessert have a deep brown colour. Blondies can be prepared very much by adding chocolate chips or any other flavored chips. Blondies are baked in pan as much as like brownies and they are cut in rectangular shapes for serving. One of my favourite way of indulging these blondies is to top them with a scoop of vanilla icecream drizzled with caramel sauce. Coming to my today's recipe, this blondies calls for Espresso coffee powder which plays an important role to bring the flavor in this simple but yet a delicious blondies.

We are almost nearing the end of the month and i have been successfully running this mega marathon even with my busy schedule. However am so happy that even a busy life time didnt stopped me from blogging. Espresso blondies makes an excellent evening snack to enjoy with your favourite drink, you can pack them very well in anyone's snack box, i have added walnut to this blondies to bring the nuttiness. You can add chocolate chips or any other varieties of nuts as you desire to make blondies more as extremely delicious dessert.
1cup Flour
1cup Brown sugar
1/2cup Butter (room temperature)
1/4cup Hot water
2tsp Instant espresso powder
1tsp Vanilla
1/4tsp Baking powder
2 Eggs
1/4cup Walnuts (chopped)
Pinch of salt
Grease a square pan and keep aside. Add the espresso powder in hot water and stir in.
Sift the flour, espresso powder, baking powder,salt in a bowl. Meanwhile in an another bowl, beat the eggs, brown sugar, until the mixture turns creamy.
Now add the espresso mixture, vanilla extract and beat again.
Slowly add the flour mixture, walnuts and fold everything gently.
Pour this blondie batter in already prepared pan and bake for 20-25minutes.
Once cool, slice into bars and serve.

The blondies look Xcellent! And your idea of having it with caramel sauce and ice cream is making me drool here. Wish I could grab some.

I was wondering what you would come up with X and you've done it with an excellent recipe. I once baked blondies and it turned out so bad. Perhaps I will try them again by following your recipe.
