Sevai/Idiyappam/String hoppers, is a steam cooked gluten free noodles prepared with rice flour. You can dish out many lipsmacking dishes out of this fantastic nutritious sevai. I have already posted variety of dishes with this string hoppers but still i have many to post and my today's post was sitting in my draft since a while, today i have a reason to post it as this dish suits absolutely prefect for this week's blogging marathon. Yes am running this week's blogging marathon with Vegetarian Dinner dishes as this week's theme. This tangy Lemon sevai will definitely please your tastebuds,
This vegan lemon rice sevai calls for a easy cooking process if you have some already cooked string hoppers in your fridge. You can still stick with readymade store bought rice sevai to make this delicious dish. However mine is prepared with homemade rice sevai. Simply tempered with usual spices and drizzled with freshly squeezed lemon juice, this lipsmacking lemon sevai gets ready very much easily than you can imagine. An excellent healthy meal to pack even in your lunch box, this dish tastes fabulous even for our dinner.
3cups Cooked Rice sevai
2tbsp Lemon juice/Juice from a lemon
1/2tsp Mustard seeds
1/2tsp Urad dal
1/2tsp Channa dal
Few curry leaves
1tsp Ginger (chopped)
3nos Green chillies (slit opened)
Few peanuts
2 Dry red chillies
1/4tsp Asafoetida powder
1/4tsp Turmeric powder
Oil
Salt
Heat enough oil, let splutters the mustard seeds, urad dal, channa dal, curry leaves.
Add in the dry red chillies, slit opened green chillies, chopped ginger,peanuts, asafoetida powder and fry until they turns brown.
Add the turmeric powder, salt,saute for few seconds.
Add the cooked rice sevai and saute it for few minutes.
Put off the stove and add the lemon juice, toss the sevai well.
Close the pan with lid and let it sit for few minutes before serving.
Serve with fryums, papads etc.

ReplyDeleteI love this sevai lemon rice. even I tried this with noodles taste out of the world. I think lemon rice tempering itself taste awesome with tangy lemon. Looks absolutely mouthwatering.
