Kourabia, this buttery shortbread cookies are from Armenia and this cookies are usually baked during Christmas. Do you know Armenian celebrates christmas during January ?, yes Armenian christmas falls on January 6. Since am blogging about Festival special recipes for this week's blogging marathon, i couldnt resist to bake this ultimate cookies as they are just irresistible and damn cute to give a try. Armenian cuisine have varieties of pastries and cookies and their foods are very much unique to explore if you love different cuisines around the world.Coming to this melt in mouth cookies, these cookies is a must if you are searching something exclusively for Christmas. This christmassy traditional Armenian cookies will definitely please your tastebuds.
If you would have went through my previous post, you might have noticed that i will be posting three different Festival special dishes, after a Greek New Year's Cake, i couldnt resist to post this Ultimate Armenian christmas shortbread cookies. Usually shaped as a round ball or else as a medium sized ropes rolled as circles,some Kourabia are prepared with coloured dough or else go for sprinkles. Since am not a big fan of coloured doughs, i skipped it completely and sticked with usual dough. Also Kourabia can be prepared with nut toppings too,but i kept mine simple and dusted with confectioner's sugar.

1+1/2cup All purpose flour
1cup Butter (softened)
1cup Confectioner's sugar
1 Egg yolk
Salt (pinch)
1tsp Vanilla extract
Confectioner's sugar for dusting
Preheat oven to 350 degrees F.
In a large bowl, mix together butter, confectioner's sugar, egg yolk salt and vanilla extract until creamy.
Gradually add the flour and knead everything with your fingers slowly until its turns as a dough.
Pinch off a small piece of dough and roll the dough into a rope shape upto 3-4 inches long.
Shape into a circle and press rope ends together with your thumb.
Continue this process until all the dough is used.
Bake the cookies for 15 minutes to retain the colour. Remove from the oven and dust with confectioner's sugar generously.
Cool for 5-10 minutes.
Enjoy with your favourite drink.
