An another incredible dish which is quite a must to try if you want to prepare something different with the super humble grain aka Quinoa. Quinoa, this is my star ingredient of this week's blogging marathon as am running One ingredient,three main courses as theme. Prepared with loads of vegetables and three different dals, this lipsmacking healthy dal bhath is a must if you are searching for something healthy and easy to dish out. Trust me, this mixed dals bhath is a one pot meal and you can prepare this super comforting food in less time than you can imagine. Pressure cooker is a must if you want to dish out your meals in less time. Obviously this dish calls for pressure cooking.
I prepared this fantastic super comforting meal few days back for our lunch as i dont want to make some elaborate meal. Simply served with fryums and papads, this bhath makes an excellent meal and you will definitely please your hungry tummy with this lipsmacking dish. Adding some fried cashews and drizzled with ghee, this mixed dals bhath prepared with quinoa tastes absolutely awesome while the weather is simply chilled outside. If you get a chance to cook with quinoa, dont forget to give a try to this fantastic dish.
2cups Quinoa
1/2cup Mixed Dals (toor dal,moong dal, masoor dal)
2cups Mixed diced veggies (carrot,beans,peas,zucchini,potato,chow chow,brinjal)
1tbsp Sambar powder
2tbsp Coriander leaves (chopped)
1tsp Ghee+oil
1tsp Mustard seeds& urad dal
2nos Dry red chillies
1/2tsp Cumin seeds
Few cashewnuts
Few curryleaves
1/4tsp Asafoetida powder
1tbsp Lemon juice
Salt
Wash and soak the quinoa and dals together for 15minutes in three cups of water and keep aside.
Heat enough oil in a pressure cooker, add the veggies and cook for few minutes.
Add now the soaked quinoa and dals with turmeric powder,sambar powder,salt to the cooking veggies along with their soaked water,close the cooker with the lid and pressure cook upto 3 whistles.
Meanwhile heat the ghee or oil in a pan, let splutters the mustard seeds,urad dal,cumin seeds,dry red chillies and asafoetida powder, add the cashews and curry leaves, fry for few minutes.
Once the steam gets off, open the lid and add this tempered spiced and ghee, give a stir and finally add the chopped coriander leaves and lemon juice.
Toss gently, serve hot with papads or any spicy side dishes.
