Its summer here, obviously summer fruits are easily available in every farmer's market. Needless to say watermelons started showing their heads and last week we bought a huge watermelon from farmer's market. After having them instead of trashing their rinds, i usually use them for making some nutritious dishes. Dont ever trash the white rinds after having watermelon, they makes wonderful foods.This dal based gravy makes an excellent meal when served along with rice and papads. Usually i make kootus with loads of vegetables, but this time when i planned for making a kootu dish, i simply went in preparing this protein rich black-eyed peas with watermelon rinds. Kootu have their important place in our weekly menu, if i want to feed my kids with vegetables i will immediately go for making kootus.
Coming to this lipsmacking kootu, this gravy is absolutely a delicious, nutritious and very easy gravy to prepare.You can turn your leftover cooked black-eyed peas or any other cooked beans as kootu with any sort of veggies. Since i had some white rinds of watermelon sitting in my fridge, i prepared making this kootu and this kootu goes awesome with rice for lunch, or else for dinner along with rotis. Personally, dishing out kootu is one of the best way to sneak this protein rich black-eyed peas in our menu. If you are follower of my space, you might have noticed that am running a whole month of blogging marathon with 5 ingredients for 5 weeks. And i picked dry beans, obviously the star ingredients for this week is Black-eyed peas. Hence am posting this fingerlicking goodness gravy for my today's post.
1+1/2cups Watermelon (white part & chopped)
1cup Cook Black-eyed peas
1/2cup Yellow Moong dal
1no Onion (chopped)
1no Tomato (chopped)
1/4tsp Turmeric powder
Salt
Oil
1tsp Mustard seeds, urad dal & cumin seeds
3nos Dry red chillies
Few curry leaves
1/4tsp Asafoetida powder
Chopped coriander leaves
To Grind:
2tbsp Grated coconut
3nos Green chillies
1tsp Cumin seeds
1tsp Peppercorns
Grind all the ingredients given under the list 'To Grind' as fine paste with some water.
Meanwhile wash the yellow moong dal and keep aside for few minutes.
Heat a tsp of oil, add the chopped onions, chopped tomatoes and saute for until the onions turns transculent, add the chopped watermelon pieces, saute until the veggies get half cooked.
Now add the soaked dal,cooked black-eyed peas with turmeric powder, salt to the cooking veggies.
Add enough water and pressure cook everything upto 3 hisses.
Heat enough oil, fry the mustard seeds, urad dal, cumin seeds along with asafoetida powder and curry leaves keep aside.
Once the pressure get released, add this tempered spices, grounded paste and cook for few minutes,put off the stove.
Serve with rice.
