Kadamb/Taushe idli/Southekayi Kadubu/Thoushe Muddo - This is how Cucumber idli is know in Konkani cuisine. Though cucumber idli is usually prepared with either rice rava or semolina, my version of cucumber idli is completely different from the traditional one. Do you know, traditionally this cucumber idli is steamed in Turmeric leaves to give a nice aroma after cooking. However my today's post is not a traditional one, and i may say proudly that its one of my creation which is tweaked by myself after going through many cucumber idli posts. Since i dont want to make this idli with rice rava or semolina i opted for a usual pearl millet idli batter in which i mixed a grounded paste of cucumber-green chilly and some grated cucumber. Trust me this idlis came out with a nice flavor and delicious as well.
Am running this week's blogging marathon with 3 Veggies that are fruits, after a lipsmacking Kongu nadu Tomato kurma now am sharing a nutritious, healthy, and filling breakfast dish aka Idli, as cucumbers are considered as veggies though its a fruit. These idlies served with spicy chutneys or side dishes makes an excellent healthy breakfast and you can serve everyone at home without any hesitation. Though cucumber added to the pearl millet idli batter makes bit thin in their consistency, once cooked these idlies came out simply prefect.
2cups Pearl Millet IdlI Batter
1no Grated cucumber (medium size)
1no Green chilly
Oil for greasing
Squeeze out the grated cucumber to remove the water. Now take half of the cucumber in a mixie jar along with green chilly. Grind as fine paste.
Now add the remaining grated cucumber, grounded paste to the pearl millet idly batter, mix well.
Grease the idli mould and pour a ladle of batter to the greased idli plates.
Steam cook in idly cooker until they gets well cooked.
Serve this idlis with spicy chutneys.
