South Indian breakfast is uncomplete without chutneys, varieties of chutneys are served along with crispy dosas or softy fluffy idlis for breakfast or for dinner. Obviously South Indians makes many variety of chutneys to serve along with breakfast dishes especially for hot steaming idlis.If i serve idli for our dinner, my husband will definitely asks for atleast for two chutneys. Whenever i make Crispy dosas or idlis, i dont have any excuse to dish out atleast more than a chutney. If you check my space, you can see many varieties of chutneys, though i have many combination of chutney to give a try i still have few more to cook and post in my space. Needless to say that i couldnt stop myself to give a try to this incredible chutney with some fresh curry leaves. This flavourful chutney came out simply awesome.
When served along with dosas, everyone at home enjoyed thoroughly and asked for more dosas to have along with this aromatic,healthy chutney. As most of us knows, curry leaves are healthy,its advised to take them quite often in our meal. South Indians knows how healthy this green curryleaves are. Beta-carotene rich carrots are seriously very excellent for making this chutney. 1cup Carrots (grated)
2sprigs Curry leaves
1inch Ginger (chopped)
5nos Garlic cloves
4nos Dry red chillies
1no Tamarind (blueberry size)
1/2tsp Mustard seeds
1/2tsp Urad dal
Few curry leaves
Salt
Oil
Heat enough oil in a kadai, fry the curryleaves,chopped ginger,garlic cloves,dry red chillies one by one until they get well fried.
Now add the grated carrots to the same hot kadai and cook until they shrinks,finally add the tamarind piece, fry for few seconds and put off the stove..
Grind everything as a fine paste with enough water.
Meanwhile heat enough oil,let splutters the mustard seeds,urad dal,curry leaves, add this tempered spices to the chutney.
Serve with Idlis or Dosas..
SO colorful and it is a wonderful idea to use vegetables when making chutney.

ReplyDeleteEven my husband asks for more than one chutney if I make idli dosa for lunch or dinner. But, me making idli dosa is a rare. I love chutneys with vegetables and it is a nice way to consume vegetables specially for those who wound not eat veggies otherwise. Country looks delicious.
