My kids are great fans of my savoury bakes, especially if they are stuffed with spicy filling made either with potatoes or else with paneer. Obviously if am planning for a stuffed bread rolls, i usually stick with simple potato filling. I have tried couple of shapes especially when its comes to bread rolls. But still i have so many to give a try and bookmarking almost to give a try. Shaping a bread is an art, however am trying my hands to bake some prefectly shaped breads, yet to achieve many but still am happy with my bakings. My today's post goes for an excellent evening snack which goes a super filling, obviously a prefect snacks for some hungry tummies. Simple potato masala filled inside a rose shaped bread rolls makes this fabulous baked goodies.
If you dont like potato filling, make any spicy filling as your desire, however after potato filling, my kids just love paneer filling, yes its works awesome as well. Coming to this rose rolls, i prepared a flavoursome bread dough spiced with cumin seeds, rosemary sprigs. And this spice touch makes the difference from the other bread dough. If you dont want to make this kind of bread dough just stick with your usual bread dough. For Bread Dough:
3cups All purpose flour
2tbsp Wheat bran
1tsp Cumin seed powder
2tbsp Fresh rosemary sprigs (chopped)
1tbsp Active dry yeast
1tbsp Sugar (for yeast)
1/4cup Olive oil
1/2tsp Salt
1cup Lukewarm water
In a bowl, mix the yeast with warm water,sugar and salt, let it stand for 5minutes until the yeast turns foamy.
Now take the the flour,wheat bran,cumin seed powder, fresh rosemary sprigs, in a bowl. Slowly add the olive oil, foamy yeast and knead as a stiff dough.
Dust the dough and knead for 8-10minutes until the dough turns soft and elastic.Place the dough in a greased bowl and cover it.
Let it rise in a warm place until the dough gets doubled about 2 hours.
Potato masala:
2nos Potatoes (cooked & cubed)
1no Onion (chopped)
2nos Green chillies (chopped)
1/2tsp Cumin seeds
1tsp Garam masala powder
Oil
Salt
Few curry leaves
Grated cheese (for topping)
Heat enough oil,let crack the cumin seeds and curry leaves, add the chopped onions,chopped green chillies,saute until the onions turns transculent.
Add the garam masala powder,salt and cook in medium flame, springle some water.
Finally add the cubed potatoes,cook for few more minutes until the masala gets well cooked.
Keep aside and let them cool.
For Assembling:
Punch the dough and knead for a while.Divide the dough into 15-16 sections and shape them into balls.
Roll out each ball to medium sized disc.Make four diagonal slits, leaving the center intact.
Drop the potato filling in the center and top it with grated cheese.Take one of the slit and cover a side of the filling with it.
Take the opposite side's slit and cover the other side of the filling with it.
Repeat with the two last sections.Pinch the dough on the side to seal it.
Repeat the same process, until the bread rolls gets ready.Arrange the prepared rolls on a greased baking tray.
Pre-heat the oven to 350F.
Bake for about 20-25 minutes or until the crust turns golden brown.
Enjoy warm or at room temperature.
