Actually my today's recipe is completely gluten free, yes no flour is used and thickly sliced eggplant pieces serves as the base of this low carb pizza. As i told earlier, we guys are trying to reduce our carb in our daily menu and trying to replace it with low carb dishes. Seriously Low carb dishes will definitely satisfy your tastebuds. Yes dieting never asks you to starve, just replace your usual highly rich dishes with vegetables and fruits to fill your hungry tummy. You can dish out all your favourite high caloric dishes simply with vegetables and trust me you wont ever miss those highly carb rich dishes.
This pizza tastes absolutely awesome when served warm, and very much prefect for the gluten free diet. Mini eggplant pizzas are quick to make if you go for store bought pesto or pasta sauce, though i used a simple vegan homemade pesto i usually prepare myself at home. If you want to make this eggplant pizza with different toppings, just go on eventhough i sticked with pesto and grated cheese.Am sure whoever want to diet and love pizza very much can enjoy thoroughly this low carb version pizza. 1no Large eggplant
1tsp Salt
1/2cup Grated emmental cheese
4tbsp Vegan Coriander Cashew Pesto
Cut eggplant into thick rounds,generously sprinkle with salt. Allow to sit for 30 minutes.
Rinse the eggplant in cold water, and remove the moisture with paper towel.
Preheat the oven to 375 F.
Place the eggplant slices on a baking mat, top it with pesto, grated emmental cheese and bake for 20-25minutes.
Serve warm or at room temperature.

Using eggplant as the pizza base sounds interesting and delicious. I'm definitely going to try these out soon.
