One more addition to my cookies collection is this Eggless and damn cute stained glass cookies, this cookies are in my to do list since a long. Everytime i want to bake some, either i finish baking with a different cookie or my time schedule will get messed up. But this time when i planned something for a christmas theme cookies, the first thing came to my mind is this stained glass cookies. As usual these cookies are egg free but buttery, dangerously addictive cookies. None can resist to this beauties and am sure kids will go crazy if they saw this ultimate cookies in their snack box or else in a party table. Seriously this cookies asks for less efforts and the final result will definitely makes you super happy.
This cute and attractive stained glass cookies asks for hard candies which are crushed as tiny pieces, dropped later inside a cookie hole, while baking those candy pieces gets melts and fill the cookie hole. This makes these ultimate cookies, trust me while munching these cookies you wont stop just with one. These eggless stained glass cookies are going to be a part of this week's blogging marathon. I picked Kid's delight-Finger foods/Party pleasers as this week's theme, obviously this stained glass cookies will be a big hit among the kids. If you are planning a kid's party, dont forget to bake these cookies. Actually i baked these beauties to carry for a small get together for xmas celebration.Check out the Blogging Marathon page for the other Blogging Marathoners doing BM#59. 3/4cup Butter
1cup Icing Sugar
3tbsp Curd
1tsp Vanilla extract
2+1/2 cups All-purpose flour
1/2tsp Salt
Different hard candies
Crush different colour candies into small pieces as per need, i used red, green candies for the christmas theme cookies.
Line up a baking tray with baking sheet and keep aside.
Pre-heat oven to 350F. Sift together flour and salt and keep aside.
Add butter and icing sugar together in the bowl of your electric beater. Beat on medium speed until the mixture becomes creamy.
Add the curd, vanilla extract and beat again until combined. Now add the flour and beat on slow speed until flour gets well mixed.
Do not over beat. Use your hands to bring the dough together. Wrap it and keep in fridge for one hour.
Dust a rolling surface with enough flour, roll the cookie dough and using a cookie cutter, cut the dough as any shape as you desire.
Transfer the cookies in a lined baking tray.
Use a smaller cookie cutter, cut the middle part of the shaped cookie.
Add the crushed hard candies in the hole , do not fill it too much.
Bake the cookies for 10 -15 minutes in middle rack.
Let them cook completely on the tray before you remove the cookies.
Enjoy.
