So many Cookery Tv shows do exists in my mother tongue 'Tamil', obviously i dont have that much to follow each and every cookery shows. Whenever time permits, i check those shows and try to recreate few dishes if they sounds different from the usual one in my kitchen. Recently i saw a famous cookery show in one of the regional tv and got hooked to a rice dish where the host of this show used pumpkin seeds to make this quick rice. Since i dont have pumpkin seeds, i tried the same rice dish with watermelon seeds which i bought during my last India trip. Pumpkin or melon seeds, am sure this easy breezy rice which definitely tickle your tastebuds and you can pack them very well for your lunch.

If you are in hurry and dont have enough time to cook your lunch, just try to make this quick one pot meal. You just need already cooked rice to make this dish ,this rice gets ready very quickly than you can imagine. Just dry roasted melon seeds with dry red chillies is quite enough to spice this rice with usual tempering spices and peanuts. We just loved having this rice with papads and trust me you will definitely enjoy this simple rice. This ultimate watermelon seeds rice served warm or at room temperature makes an excellent meal as watermelon seeds have loads of nutritional values and rich in vitamins. 2cups Cooked basmati rice
1/2cup Watermelon seeds
6-7 nos Dry red chillies
1tsp Mustard seeds
1tsp Urad dal
Few curry leaves
Few peanuts
1/4tsp Asafoetida powder
Salt
Oil
Dry roast the watermelon seeds, dry red chillies until the seeds starts popping,put off the stove.
Transfer the dry roasted seeds and chillies to the mixie jar and let it cool completely.
Grind as bit coarse powder with salt.
Heat enough oil, let splutters the mustard seeds, urad dal, curry leaves and asafoetida powder.
Add the peanuts and fry until they turns slightly brown.
Add immediately rice, the grounded watermelon seeds and toss everything gently.until the rice gets completely gets well mixed with the spice powder.
Serve warm or at room temperature with papads.
