Mathri is a popular North Indian fried snacks usually served with spicy pickle or along with a cup of masala tea or coffee.These mathris exists with different ingredients, from dry fenugreek leaves to sesame seeds, many flavourful, crunchy and delicious mathris do exists. These crackers are prepared easily with basic ingredients which is quite easily available in everyone's pantry. Usually fried, these crackers makes an excellent evening snacks, a crowd pleaser or just as an appetizier depending upon how they are served. You can simply serve this mathris with spicy chutneys,flavoured cream cheese or simply with your favourite drink.
My today's baked mathris are from Merry Tummy, i baked these crackers few days for this month's Home Baker's Challenge, a monthly baking event hosted this month by Mayuri Patel of Mayuri's Jikoni, She suggested us different Diwali bakes for this month's event. After Nankhatai, i couldnt resist to make this dangerously addictive and flavourful baked mathri. These baked salt crackers came out extremely awesome and we enjoyed thoroughly with a cup of masala tea. Served along with herbed cream cheese, my kids just went on munching these baked beauties. 1cup Wheat Flour/Atta
1/2cup All-Purpose Flour/Maida
1/4cup Sooji /Roasted Rava/Semolina
1tbsp Ajwain Seeds/Carom seeds
1tsp Black Pepper powder
1tbsp Kasuri methi/Dry fenugreek leaves
Salt
3tsp Sesame seeds
2tbsp Oil
Take the flours, semolina, carom seeds, black pepper powder, kasuri methi,salt and sesame seeds in a bowl.
Heat the oil in a small pan, add to the flour mixture.
Slowly add lukewarm water to the flour mixture and knead everything as a smooth dough. Cover it and keep aside for half an hour.
Divide the dough into 2 equal balls. Roll each ball with a rolling pin.
With a fork, poke the rolled dough to keep the mathris flat while baking.
Using cookie cutter, cut the rolled dough, i used round cookie cutter.
Preheat the oven at 350 degree F.
Transfer the mathris to the baking sheet lined over a baking tray.
Bake for 13-15 minutes or until the mathris turn golden brown.
Enjoy this healthy snack with your favourite dips of pickle.

Traditionally deep fried snacks become more welcome when presented in such a guilt free manner.
