Socca is a thin, unleavened crepes or pancakes made from chickpea flour. Known in Italy as farinata or cecina, this chickpea pancake was founded in Genoa and became a popular food of the Ligurian Sea coast, from Nice to Pisa. Socca is really very easy to make - simply a mixture of chickpea flour, water, olive oil, and salt and spices makes this pancakes. Socca can be cooked in broiler or in open oven until crisp and charred.Though my version goes for pan frying which makes excellent socca as well. Socca is quite popular all around the world; depending on where you are in the world,you may serve it more olive oil, salt, pepper, cumin, harissa, or even jam.
I served socca with reine claude plume jam which i prepared quickly at home to serve along with this chickpeas pancakes. Both works awesome and the plate of Socca just vanished within few seconds. The cumin seeds added in this pancake gives a subtle flavor to this pancakes also herbs de provenance gives an excellent flavor too. Totally we loved Socca very much. After a month of blogging marathon, today we are kick starting the routine three days blogging marathon and i picked different pancakes/flatbreads. Hence am posting this Socca..
1cup Chickpea flour
1/2tsp Pepper powder
1/2tsp Cumin seeds
1/2tsp Herbs de provence
1tsp Rosemary
3tbsp Olive oil
Salt
Take the flour, salt, pepper powder, cumin seeds,herbs de provence, rose mary in a bowl, add in luke warm water and whisk everything well.
Add 2tablespoons of olive oil to the batter, keep aside for an hour or two.
Heat a pan, add the olive oil, once the oil is hot, add immediately the batter to the hot pan.

Cook for few minutes until the edges turn firm.
Lift the pancake, and flip it, cook on the other side.
Cut as wedges or as small squares.
Enjoy with jam.
