If you are searching for a new roti or paratha stuffed with something nutritious, am sure this dish will definitely gives you some idea. Yes this paratha aka roti is made with usual paratha dough but the stuffing i prepared for making these parathas was quite a different one from the usual stuffing. I stuffed this parathas with spicy urad dal filling. This paratha came out absolutely fabulous and the interesting part is these parathas are nutritious and filling at the same time. A different paratha from the usual parathas, am sure if you give a try to this paratha, you will surely make this paratha often. Since i prepared a spicy urad dal filling, you doesnt even need to serve this parathas with a side dish.
Initially i want to make some Khara polis but since i ran out of the channa dal,i couldnt make it. Instead of some spicy polis, i simply tweaked to this dal based roti/paratha. Soaked dehusked urad dal, grounded with fennel seeds later as a fine paste, cooked in a pan with chilly powder and salt makes the stuffing.Very simple stuffing na, this stuffing makes this simple roti more interesting. Generally used in making idli, dosa and vadas in South Indian cuisine, urad dal can makes excellent stuffing in parathas too. Give a try this delicious roti and do let me know. As i told earlier, am running this first week of blogging marathon with Lentils in 3ways as theme for this week, obviously this urad dal roti goes for this week's theme.
2cups Wheat flour
1/2cup Dehusked Urad dal
1/4tsp Fennel seeds
1tsp Red chilly powder
1/2cup Warm water
Salt
Oil for cooking
Flour for dusting
Take the wheat flour with salt in a large bowl, gradually add the warm water and knead as smooth and soft dough.
Keep aside half an hour.
Meanwhile grind the soaked urad dal with fennel seeds and salt as bit fine paste without adding water.
Heat 2tsp of oil in a pan, add the chilly powder, grounded urad dal paste and cook in medium flame for few minutes until the paste gets well cooked.Let it cool completely.
Make medium sized balls from the dough and small sized balls from the urad dal mixture.
Roll the dough as small circles, drop a ball of urad dal filling, bring the edges together and make as a ball.
Dust the dough with flour and roll them as parathas
Meanwhile heat a tawa, drop gently the rolled parathas, drizzle few drops of oil, cook on both sides until they gets well cooked.
Enjoy warm with any sort of chutneys or kurmas.
