Here is Paris, we dont get varieties of Indian greens, drumstick leaves is one of the easiest Indian greens we can see often in Indian groceries, obviously whenever i go to Indian grocey i dont forget to pick a packet of this greens. Back home, i usually clean and freeze them for further use. But this time i got only a small packet of this green. Obviously i opted for an easy dish, actually i want to make a one pot meal with that small quantity of drumstick leaves. Finally i decided to go with this easy breezy fried rice with simple ingredients especially with drumstick leaves which i dont want to freeze. This rice dish gets ready very easy and anyone can carry this fried rice in their lunch box without any fuss.
Trust me, this fried rice is one of the best way to sneak this iron rich greens. Actually the drumstick leaves gives a wonderful flavour to this simple fried rice. I just used both carrots and capsicum to give some colour to this rice, if you want to add more vegetables and less greens just make your rice as though. My version goes for more drumstick leaves and less vegetables. However this rice served with some fritters makes an excellent meal to everyone at home. I served this rice with some onion fritters and papads, we had a super filling lunch and this fried rice is definitely a satisfying meal.This healthy fried rice is going for this week's blogging marathon as i picked Easy school recipes from the three different themes.If you have leftover cooked rice, this fried rice takes hardly less than 10minutes to get ready.

2cups Cooked rice
1/4cup Carrots (chopped)
1/2cup Capsicum (chopped)
1cup Drum stick leaves
2tbsp Green chilly sauce
2tbsp Soya sauce
1tbsp Tomato Ketchup
Salt (if needed)
Oil
Heat enough oil in a wok, add the chopped carrots,drumstick leaves and cook for few more minutes.
Add the chopped capsicum,soya sauce, ketchup,green chilly sauce to the cooking veggies and saute for few seconds.
Immediately the rice,salt and toss everything gently.
Serve immediately with your favourite side dish.
