Pancakes, that too with instantly prepared pancake mix, yes i did it. My younger one's favourite breakfast is pancakes, he can just have pancakes everyday for his breakfast. When i was looking for something quick and easy for this week's blogging marathon's theme, i got hooked to this instant pancake mix. With simple ingredients, your pancake mix is ready and you can store them very well in your pantry for many days. Obviously who will hesitate a second to give a try. I tried making this easy breezy pancake mix last week and made super spongy and fluffy chocolate chips pancakes for our sunday's brunch. Trust me,even my elder one who is not that much fan of pancakes enjoyed thoroughly this fluffy pancakes with homemade date syrup.
If you have this instant pancake mix, you can prepare pancakes in a jiffy. The original recipe used eggs for making the pancakes, i have skipped it and made mine as eggless. Also this pancakes are completely butter free, if you are using a non stick pan, you doesnt even need oil or butter to grease the pan.However if you want to add both eggs and butter to this instant mix, just go on. After all, weekend brunch need to be bit rich rite.

2cups All-purpose flour
1+1/2 tbsp Baking powder
1+1/2 tsp Baking soda
1/2 tsp Salt
2tbsp Sugar
Sieve all the ingredients except the sugar, add finally the sugar,give a stir.
Conserve everything in a air tightened box.
For pancakes:
1cup Milk
Chocolate chips (as per need)
Cooking oil or melted butter (for cooking pancakes)
Add the milk to one cup of instant pancake mix, whisk until thoroughly combined.
Spoon one to two tablespoons of batter into a hot griddle, sprinkle few chocolate chips and cook for few minutes.
Flip the pancake to the other side until golden brown.
Top with syrup or honey.
