Parsi Style Brown rice is one among the traditional rice dish served along with their famous Dhansak,a Parsi gravy. Most of the Parsi's sunday's favourite is this Brown rice and Dhansak and even for few this Brown rice means Special occasions. I crossed many delicious Parsi style brown rice, but however i want to stick with the traditional one, obviously i picked this brown rice from here. I just loved the spice mixture used in this dish and this brown rice is quite easy to make. Obviously i grinded up the spice mixture before starting the cooking process and the spice mixture gives an excellent flavour to this beautiful mildy sweet brown rice.
The brown colour of this rice is achieved by caramelising the sugar or jaggery, hence this rice have a beautiful caramel colour. I used sugar and jaggery for making my Parsi brown rice, obviously the jaggery with sugar gives an excellent deep colour to this rice instead of bit light caramel colour. However we loved this brown rice with spicy chicken curry, eventhough i want to serve this rice with vegetarian dhansak. I'll be making this combination soon, as my kids loved this sweet rice. Few Parsi style brown rice goes for onions, i couldnt resist to add some onions in my rice eventhough the original recipe didnt went for onions.

2cups Rice
1no Onion (big and sliced)
2tbsp Sugar
A small chunk of Jaggery
2 Cardamoms
3 Bayleaves
2sticks Cinnamon
2tsp Jeera
6 Cloves
Oil
Salt
Grind the cardamoms,bayleaves, cinnamon stick, jeera and cloves as powder, i grinded mine as powder, you can grind them as bit coarse powder if you want.
Heat a large pot with oil, add the sugar and jaggry and let the sugar becomes brown in colour, be patient and take care not burn.
Add the onions and masala powder, cook for few minutes.
Add 4cups of water and bring it to boil.
Add enough salt, rice and cook in medium flame and then simmer until the rice gets well cooked.
Serve hot with a spicy side dish..
