After making some pineapple kheer, i had some leftover tinned pineapple chunks sitting in my fridge, to give them a second life i simply baked out some muffins with them. Pineapple, this fruit is my favourite after mango and jackfruit. Obviously i love make variety of foods with this fruit. I bake quite often the most popular pineapple upside down cake to satisfy my tastebuds. But this time, since i want to make a quick and easy breezy baked goodies, i opted for this egg free and completely butterfree pineapple muffins. Muffins, this individual size cake bites are very easy to prepare and bake if you dont feel like baking for hours. Since my today's muffins are completely egg free and butter free,you can bake these cuties with simple ingredients easily available in everyone's kitchen.As i told earlier, tinned pineapple chunks are quite easier to bake this muffins than with the fresh pineapple chunks as this muffins goes for pineapple puree as well. However if you dont get tinned pineapple chunks, you can stick with the fresh pineapple chunks. This eggless butterless pineapple muffins are going to join this month's mega blogging marathon as am running with baking as theme.
2cups All purpose flour
3/4cup Sugar
1tsp Baking powder
1/2tsp Baking soda
1cup Yogurt
1/2cup Oil
1/2cup Pineapple puree
1tsp Vanilla extract
1cup Pineapple chunks (chopped finely)
Preheat the oven to 350F, line the muffin tray with muffin papers or muffin cups.
In a bowl, sift the flour,baking powder,baking soda and salt.
Meanwhile in a small bowl whisk together the sugar, yogurt,pineapple puree,oil and vanilla extract.
Pour the wet ingredients to the dry ingredients, whisk lightly. Dont overmix the batter.
Gently fold in the finely chopped pineapple chunks.
Spoon the batter evenly to the already prepared pan.
Sprinkle few finely chopped pineapple chunks on the top and bake for 20-25 minutes until a skewer inserted comes out clean.
Transfer to wire rack and cool it.
Carefully remove the muffins from the pan, cool completely.
Enjoy with your favourite drink.
