Pesto, who will say no to this beautiful Italian sauce. Pesto sauces are versatile, you can have it with pastas or simply as dip with bread or else to spice up any dish. Parsley pesto was in my to do list since a long as i usually get them from stores. Dunno y i couldnt make this parsley pesto earlier, but finally one fine day i couldnt resist myself to get some bunch of super fresh parsley leaves just to make this parsley pesto. I used almonds instead of usual pine nuts, pine nuts are bit expensive here when compared to almonds.
This parsley pesto can be prepared just in matter for 5 minutes, just blend everything and your pesto is ready to relish with your favourite pasta. Pesto suits prefectly awesome while the weather is super hot as this sauce doesnt need any cooking process.As usual i didnt add any cheese in this pesto, obviously its vegan but with some garlic. 1bunch Parsley leaves (washed)
2nos Garlic cloves
1/4cup Almonds
1/4cup Olive oil
Salt
1/2tsp Pepper powder
Take the parsley leaves, garlic cloves, almonds in a food processor, blend for few minutes.
While the food processor running, add slowly the olive oil until everything gets well grounded.
Season it with salt and pepper powder.
Serve with pasta..

looks so deliciously green. Have made pesto with coriander. Will try with parsley next time.
