Am a person who love to dish out easy breezy dishes whenever am in hurry or lazy to cook. If you go through my space, you can definitely see varieties of one pot meals and many more easy dishes which gets ready in less than 15-20minutes. Actually i love to spend most my leisure time in my kitchen but i dont take too much of my time to cook, sometimes i make cook three or four dishes simultaneously as i dont have much time to spend in my kitchen or in cooking during my week days. For the past 5months, am cooking like a mad during weekends as i want to prepare few dishes just to keep my space alive before the weekend gets finished. Obviously i go for quick and easy one pot meals for our lunch. One among those quick one pot meal is this coconut pulao or white pulao. This dish is my young one's favourite, trust me this dish is very quick to make and gets ready easily in pressure cooker.
You can just serve this mildly spicy and flavourful pulao to anyone as this dish doesnt go for ginger garlic paste or any specific masala powder. Wholespices and slit opened green chillies gives the flavour and the spiciness to this dish. You can serve this dish very well during a get together or else as a weekend special with a rich side dish. 2cups Basmati Rice
3cups Coconut Milk
5nos Green chillies (slit opened)
1/2cup Mint Leaves (chopped)
2nos Onion chopped( lengthwise)
5nos Garlic pods
2nos Whole spices( bay leaves, cinnamon sticks, cardamom, cloves, star anise)
Salt
Oil
Wash thoroughly the basmati rice, drain the excess of water with a strainer..
Heat enough oil, add the whole spices n fry them until they turns brown.
Now add the chopped lengthwise onions,slit opened green chillies and garlic pods..stir them continously until they turns transculent.
Add the coconut milk to the onion with chopped mint leaves, bring them to boil.
Add the rice with salt, cook them in medium high flame for few minutes, then cook them in simmer until the water get absorbed by the rice.
Dont stir them immediately, this will break the rice...
Serve hot with any choice of curries.
