Cheesecake,my younger one can have this absolutely delicious cake anytime. He can have any flavored cheesecake eventhough his favourite is always chocolate cheesecake. I love baking and my space is loaded with various bakes obviously am an active member of many baking group who never fail to participate every month..Being a member of a weekly baking group, an Indianised cheesecake was suggested to the members of the group few weeks back. I was astonished to see a beautiful fusion cheesecake with Indian flavors in it. The base of the cheesecake went for Motichoor laddoos,followed by kesar aka Saffron cheese layer and the glaze went for gulkhand. I never thought of making a cheesecake with Indian flavors, when i saw this Indian cheesecake challenge i couldnt resist myself and tried immediately. But i made few changes according to the ingredients available in my pantry and fridge. Yes instead of motichoor laddoos i simply went for gajar halwa aka carrot halwa and the middle layer is simply prepared with paneer, agar agar, coconut milk and hung curd and instead of gulkhand glaze i opted of rose milk glaze. Trust me these three flavors works out prefect, when i had a slice of this cheesecake, the flavors just bursted in my mouth, omg i cant say in words, you have to give a try to this combination to enjoy thoroughly this Indianised cheesecake.
This cheesecake is completely egg-free, gelatin-free,no baking is needed as well. Obviously one can make this delicious no bake cheesecake at home happily without any hesitation. However the spring form round mould pan is very much advised, even if you dont have springform pan, you can still make cheesecake with usual mould using parchement paper or acetate sheet. Springform mould makes the life easier and this mould is very much useful if you are planning to make cheesecake in future. Coming to this cheesecake, you can go for other Indian sweets like katlis,laddoos and halwas.
For base:
1+1/2cups Gajar Ka Halwa/Carrot Halwa with Khoya
For cheesecake:
120grms Crumbled paneer
1/2cup Hung curd
200ml Condensed milk
200ml Dairy fresh cream
1/2cup Thick coconut milk
1/4cup Warm milk
A big pinch Saffron strands
4tbsp Agar agar powder / China grass strands – 15 gms
1/2cup Water
For Glaze:
1tbsp Agar agar powder
1tbsp Sugar
1/4cup Milk
1/4cup Fresh cream
3drops Rosemilk essence
To the warm milk, add saffron strands and let it soak for 15 to 30 minutees.
In a bowl, take crumbled paneer, hung curd,condensed milk, fresh cream, coconut milk into it and beat them all together until smooth.
Heat the water, add the agar agar powder,mix well until the agar agar mixture is completely clear.
Filter the saffron soaked milk and add it into the cream cheese mixture.
Now add the agar agar mixture and mix well gently.
Line a springform pan with a parchement sheet, add the carrot halwa, firmly press them to the base making sure the sides are sealed well. Level them as much possible.
Pour the cream cheese mixture until it reaches 3/4th level of the pan. Now place the pan with the cheese cake mixture into the freezer for 30 minutes until firm.
For the glaze, take the water, agar agar in a bowl, heat and mix until the mixture turns clear.
Add fresh cream,milk,sugar,rosemilk syrup to the mixture.
Once the cheese cake in the freezer is set nicely, take it out and pour the glaze mixture on top and set it back in the freezer for another 30 minutes until firm.
Once its firm enough, you need to remove from the freezer and place it in the refrigerator.
While removing the cheesecake from the pan, just pass a knife slowly to release the sides from the pan and transfer the cheesecake to a serving plate.
Cheesecake is ready to be cut into slices and serve.
