Am sure you will be surprised to read the title, yes this wonderful looking waffles are prepared with healthy stuffs in it. Barnyard millets aka Kuthiravaali/Kuthiravalli, this nutritious millets is very healthy and definitely a versatile grain and one can make so many beautiful dishes out of this millets.Actually this post goes to this month's Shhhh Cooking Secretly Challenge started by me few months back.We are having fun in guessing other's secret ingredients through the pictures each of us have been sharing in our FB group.My pair for this month's challenge is Veena Shankar of Great Secret Of Life, she gave me millets and dates as my secret ingredients. Initially i was thinking of making a simple kheer, then later i thought i should give a try to kesari. Even two day back, i was planning for making a sweet pongal with this secret ingredients. But finally i ended up with a breakfast waffle, yes this eggless,butterless, sugarfree waffle is simply prepared with homemade barnyard millet flour with chopped dates and palm jaggery syrup. I replacd the eggs with buttermilk and baking soda, obviously butter with oil.Trust me this combination works absolutely incredible and we had a super filling brunch with this healthy waffles with our bowl of milk.
I have to say a big thanks to Veena for giving me these beautiful ingredients which pulled me definitely to think different, seriously am proud that this waffle join my list of my own creations actually my healthy innovations.If you dont know how to add this healthy barnyard millet aka Kuthiravali in your diet, give a try to this waffles, one of the easiest and definitely a better and best way to sneak. One can have this healthy waffles easily without any spread as they are already very well sweetened by the humble Palm Jaggery. Kids will definitely love this waffles if you serve them simply with nutella spread.
How to prepare barnyardmillet flour: dry roast two cups of barnyard millets for few minutes, keep aside and let it cool completely.
Grind as a fine powder, sieve the flour and conserve it in an air tightened box.
1cup Barnyard millet flour
1cup Allpurpose flour
1/4cup Seedless dates(chopped finely)
2tbsp Olive oil
1/2cup Palm jaggery syrup
1tsp Baking powder
1tsp Vanilla extract
1+1/2cups Buttermilk
1/2tsp Baking soda
Preheat the waffle maker.
Sieve together the flours and baking powder in a bowl.
Mix the buttermilk and baking soda, keep aside for 5minutes,mix the palm jaggery syrup,vanilla extract,oil and chopped dates.
Gradually add the wet ingredients to the dry ingredients and turn as a thick batter.
Pour a ladle of batter to the waffle maker until they get cooked..
Serve with a cup of warm milk with nutella spread,jams or simply with maple or agave syrup...
