Eggless butterless pizza muffins, yes this muffins are eggless and butterless, one can have this pizza muffins easily without any guilt. Pizza muffin with a medley of veggies is our favourite now, everyone at home enjoyed thoroughly for their yesterday's dinner with some salad. When served warm, the mozzarella bites i have added in this muffins makes this muffins more delicious and very cheesy. Since this muffins are kid's friendly, you can pack them very well in a kid's lunch box. Also i used half a cup of whole wheat flour along with all purpose flour,obviously this pizza muffins are quite healthier.
If you like pizzas and muffins, this pizza muffins are definitely a fabulous treat for you.You can prepare this muffins even with yeasted dough but i went for an easy breezy preparation as usual we do for sweet muffins.This eggless,butterless pizza muffins goes to this week's blogging marathon as i picked pizza snacks as theme for this week. 1cup All purpose flour
1/2cup Whole wheat flour
1tsp Baking powder
1/4tsp Baking soda
1/2tsp Italian seasoning
1tsp Salt
1/2cup Yogurt
1/2cup Olive oil
1/2cup Pizza sauce
1/4cup Chopped tomatoes
1/4cup Chopped green bellpepper
1/4cup Black olives (chopped)
1/2cup Mozzarella (chopped as small cubes)
Preheat the oven to 375F, grease a muffin tray well and keep aside.
Take the flours,baking powder,baking soda, salt in a bowl, sieve twice and keep aside.
In an another bowl, take the yogurt,olive oil,italian seasoning, pizza sauce, mix well with a whisker.
Gradually add the wet ingredients to the dry ingredients until everything gets well mixed, dont overmix.
Fold in the vegetables and mozzarella cheese.
Spoon the batter to the greased muffin tray.
Bake for 20-25minutes until a skewer inserted comes out clean.
