Agneau de Pâques Brioché/Easter Special Lamb Brioche/Easter Lamb Brioche

Bread baking at home is one of my stress burster, i love to experiment with my bread dough but still i have to succeed couple of method of making bread at home like sourdough. However i love baking bread at home with my usual way of making bread dough. Till now i feel very comfort with brioche dough and i love to bake bread with this rich dough. Since few months for some reason i couldnt able to participate Defi Boulange, a fabulous bread baking event by Nadia and Manue.Eventhough this challenge was for the month of April,i dont want to miss their incredible challenge, actually the idea of making brioche lamb pulled me. Yes,i prepared this lamb brioche twice coz my first trial turned almost like a turtle lamb which was quite funny to see but tastewise nothing to say they came out just awesome.


Easter was during april month but still i want to post this Easter special brioche coz this bread was sitting in my draft since long, its better late than never na. I prefer posting it today coz of this week's blogging marathon theme, as i chosed yeasted breads aS theme.As i told earlier, i tried this bread twice at home, my first trial turned as turtle like lamb and my second trial came out simply prefect, seriously multiple trials will definitely pull you to get anything prefect, trust me i learned this after so many disasters.Thanks to Manue and
Nadia for pulling me to nail out this cute looking lamb in brioche.My lil one went crazy when he saw this lamb brioche and he simply enjoyed this bread with his chocolate drink.Obviously this brioche lamb join the kid's friendly snack's list.Check out the Blogging Marathon page for the other Blogging Marathoners doing BM#40. 


3cups Bread flour or all purpose flour
1tbsp Active dry yeast
1/2cup Milk (luke warm)
3nos Egg yolks
1/4cup Sugar+1tsp Sugar
1tsp Vanilla essence
1/2tsp Salt
80grms Butter
1tsp Sugar (for brushing)
3tbsp Water (for brushing)
Sugar pearls (as per need)


Mix the yeast,a teaspoon of sugar and salt to the luke warm milk, keep aside until the yeast turns foamy.

Meanwhile take the flour,egg yolks,sugar,vanilla essence in a large bowl, add gradually the foamy yeast and turn everything as a soft dough, now add the butter and knead everything for 10minutes.

Arrange the dough in a bowl covered with a towel,keep aside for atleast for 2hours until they double their volume.


Punch down the doubled dough, knead for few minutes, take two small balls of dough to make lamb's legs. 

Line a baking sheet over a baking tray, transfer the lamb's legs to the baking sheet.

Now pinch out a small ball of dough to make the head of the lamb. Arrange over the already prepared baking sheet.

With the remaining dough, roll it as small discs as show in the picture. Roll three discs of the dough as shown in the picture.

Roll it tightly, and slice it in middle to make a rose like shaped dough.. Finish the dough as the same way.

This is my first trial, am posting this pic to get an idea about how to arrange for making this lamb brioche as i couldnt able to click the stepwise pictures while making the second one.
Arrange these rose shaped dough one by one between the head and legs of the lamb to form the body of the lamb.

Keep them again in a warm place for an hour,covered with a towel.

Preheat the oven at 350F.

In a small bowl, mix the sugar and water for brushing together, brush the top of the bread generously

Sprinkle the sugar pearls.



Bake in oven for 20-25minutes until the bread turns golden brown.

Let it cool completely in a wire rack.

Enjo with your favourite drink.

  2. Wow is all I can say. When I say the title of the post, I assumed bread had lamb in it. lol! It did not occur to me that it is lamb shaped bread! Nicely baked.
