After Assam, now we are travelling towards Bihar, this state is situated in Eastern part of India, its one of the largest states in India. Bihari cuisine is an influence of different regions of India. A normal Bihari meal consists of rice,dal,vegetable and pickle.One among the popular bihari recipe is this kichdi/Khichdi, is a one pot meal prepared by using rice,lentils and seasoned with spices. Usually this nutritious kichdi is serve with chaar yaar which goes for curd,chutney,pickles, papads,ghee and another vital item of Bihari cuisine called Chokha. Chokha is prepared simply with mashed boiled potatoes, seasoned with chopped onions, green chillies. Bihari cuisine involves sattu flour, a powder gram flour which is widely used in Litti, a another Bihari popular dish, parathas and in many drinks.
Traditionally Bihari cuisine is cooked with mustard oil which has low cholestrol content and the seasoning goes for panchforan, a mixture of 5 seeds in equal parts,the seeds are cumin seeds, fenugreek seeds, aniseed, mustard seeds and onion seeds consists the panchforan.Ghee is very much used in Bihari cuisine and trust me i used ghee for tempering for making this delicious kichdi.Most of the Bihari sweets are prepared usually with dairy products. I enjoyed this bowl of comforting food with some pickle for my lunch few days back.Make this nutritious kichdi and enjoy while the weather is down, a super comforting food definitely.

1cup Rice
1/2cup Moongdal
1/2cup Masoor dal
1cup Mixed vegetables
4tbsp Ghee
1no Dry red chillies
2nos Bayleaves
1tsp Cumin seeds
1tbsp Ginger garlic paste
Salt
To grind:
1no Cardamom
3nos Cloves
1no Black cardmom
1inch Cinnamon stick
1/2tsp Chilly powder
1tsp Cumin seeds
2tsp Coriander seeds
1tsp Garam masala
1/2tsp Turmeric powder
Heat the ghee in a pressure cooker, add the dry red chilly, bay leaves,cumin seeds, ginger garlic paste, fry for a few minutes.
Add now the masoor dal,moongdal and fry until they turns slightly brown.
Add the rice cook for few minutes, now add the vegetables,3cups of water, salt , close it with the lid and cook upto 3 whistles.
Meanwhile roast all the spices given under the list to Grind and grind as fine powder.
Once the steam gets released, open the cooker, add the grounded powder, adjust the spice level.
Serve with chaar yaars.
