One pot meals are always prefect for lunch. Either its a sunday's lunch or a week day's lunch,one pot meal are really easy to get ready and prefect to serve for a get together. Coming to today's coriander soya pulao, this pulao goes for an easy preparation with the aromatic herb aka coriander leaves. To add the nutritional value of this pulao, i simply went for the protein rich soya chunks for making this one pot meal. If you want to make this pulao with meats, just go with lean meats like chicken or else with prawns.
Aromatic coriander soya pulao suits prefectly for a sunday brunch, i served this rice with a simple potato kurma and we just enjoyed thoroughly our lunch. Its 4th sunday of the month and since i belong to a group of friends who blogs on sunday for the event Let's Brunch On Sundays am posting this incredible delicious pulao.
2cups Basmati rice
1no Onion(chopped lengthwise)
2nos Whole spices (bayleaves, cloves, cinnamon sticks & cardamom)
1cup Soyanuggets
1cup Beatened curd
2cups Water
Oil
Salt
To Grind:
1cup Coriander leaves
6nos Garlic cloves
1inch Ginger pieces
1/4cup Grated coconut
2nos Green chillies
3nos Dry red chillies
1no Cinnamon stick
1no Cardamom
1/2tsp Cumin seeds
Grind all the ingredients from the list 'To Grind' as fine paste.
Cook the soya nuggets with enough water, strain the water and keep aside.
Meanwhile heat a pan with enough oil, add the whole spices and fry until they turns brown.
Add the chopped onions, saute everything well until the onions turns transculent.
Add the grounded paste and cooked soya nuggets until the raw smell goes away.
Meanwhile wash and soak the basmati rice with beaten curd and water, let them sit for half an hour.
Drain the soaked curd-water, pour this curd water to the cooking spices & baby potatoes...
Bring everything to boil and add the soaked rice.
Cook for few minutes and transfer the cooking rice to the rice cooker container and cook.
Once get ready, serve hot with raita or any spicy side dish..
