When Champa announced her interesting event Bake-A-Thon calling food bloggers to bake anything as eggtarian or vegetarian for this whole month of December..Immediately i mailed her as i want to be a part of this amazing event, for me baking and cooking is a kind of therapy to get ride out of my stresses,obviously how can i miss this event, so this month is gonna be a baking month for me..I already started baking some variety of breads,cookies,savouries and cakes..Anything baked can be part of this baking marathon,thanks to champa for accepting me to be a part of this event.
Few days back my neighbour gave a big pumpkin which she brought from her garden, after making few soups and curries,i turned the leftover pumpkin chunks as puree by pressure cooking them..I used those pumpkin puree and few spices to make out this beautiful looking bread along with whole wheat flour,they turned super prefect,serve it with a bowl of soup or as a sandwich, am damn sure you will have a satisfying dinner or a meal..These healthy slices of breads suits prefectly even when they are served along with grilled meats,omlettes or simply as a toast.
2cups Whole Wheat flour
1/4cup Pumpkin Puree
1tsp Cumin seeds
1tbsp Active dry yeast
1/4cup Luke warm water
3tbsp Olive oil
1tsp Salt
1/2tsp Sugar
1/2tsp Red chilly flakes
1tbsp Dry parsley leaves
1tbsp Chopped coriander leaves
Few sesame seeds
Add the active dry yeast to the luke warm water with sugar and salt, let them sit in a warm place for 5minutes, until the yeast turns foamy.
Meanwhile mix together the whole wheat flour,red chilly flakes, cumin seeds, chopped coriander leaves, dry parsley leaves in a large bowl, add gradually the foamy yeast,pumpkin puree,warm water (if needed) with olive oil and turn everything as soft and stiff dough.
Grease a bowl and place the dough, let it sit for two hour in a warm place..
Preheat the oven to 350F,line a baking sheet over a baking tray, grease loaf mould with olive oil..punch the dough down,knead well and form as a loaf,brush the top with oil and sprinkle the sesame seeds..bake for 20-25minutes until the crust turns golden brown..Let it cool completely..
Serve with any spreads,soups or simply with cheese..

I bought lots of pumpkin yesterday... now I know what to do with it, delicious, I love wholewheat bread but I never thought of putting pumpkin in it. Great idea. Have a nice weekend!
