Usually seekh kebab are made with minced meat with plenty of spices and grilled on skewers, this kebabs are cooked in tandoor,a cylindrical clay oven used in cooking or baking..My version of seekh kebab goes for corn and chickpeas, a marvellous vegetarian seekh kebab i prepared using some mixed veggies along with cooked chickpeas and fresh corn kernels..Serve it with chutneys or with mint sauce,you can have a wonderful lunch,a fabulous starter or dinner with some naan bread..I simply baked this delicious vegetarian seekh kebab, in case if you dont feel like baking them, you can very well shallow fry them or deep fry them...
1cup Fresh Corn (grinded as coarse paste)
2cups Chickpeas (cooked & mashed)
1no Potatoes (cooked & mashed)
1cup Mixed Veggies (grated carrots,chopped green bellpeppers,shredded cabbage)
2nos Bread slices(soaked in water & well squeezed)
2tbsp Coriander leaves (chopped)
2nos Green chillies (chopped)
1/2tsp Garam masala powder
Salt
1tsp Lemon juice
Oil
Preheat the oven to 350F,line a baking sheet,grease the baking sheet with enough oil and keep aside...Heat few drop of oil,saute the veggies,chopped green chillies until the veggies get half cooked..Meanwhile take the corn paste,cooked and mashed chickpeas,mashed potatoes,cooked mixed veggies,squeezed bread slices,garam masala powder,salt and chopped coriander leaves,mix everything well..
Take a small ball,turn them as oblong shape, insert a skewer and arrange over the greased baking sheet, continue the same process with the remaining veggie mixture..Bake for 20-25minutes (dont forget to turn the kebabs while baking atleast twice) in medium tray ...
Serve hot with tomato ketchup or mint chutney..
