Who will say no to baby potato roast, after trying out many versions with those cute baby potatoes, our recent favourite is this minty flavoured baby potatoes roast,this roast tastes super fabulous as side dish simply when served along with curd rice or rasam...Delicious roast gets ready very much quickly and gets vanished very soon too...Since i used Mint & Pumpkin seeds spice powder for spicing up this roast, they tastes super delicious..We enjoyed a lot with rasam rice, both turned out absolutely divine..
1/2kg Baby potatoes
2tbsp Mint & Pumpkin seeds powder
1tsp Coriander powder
1tsp Cumin seeds
Few curry leaves
Salt
Oil
Cook the baby potatoes separately in water with enough salt until they turns soft, peel the skin..
Heat enough oil, let fry the cumin seeds and curry leaves, add the baby potatoes, saute for few minutes, add the mint & pumpkin seeds powder, coriander powder and salt, give a stir, springle some water and cook in medium flame until the potatoes get well roasted..
Serve hot as side dish...
